🍫💕 Indulge in the chocolaty goodness of these irresistible Chocolate Lamingtons! Recipe: Ingredients: • 1 3/4 cups all-purpose flour • 1 1/2 tsp baking powder • 1/2 tsp salt • 1/2 cup unsalted butter, softened • 1 cup granulated sugar • 2 large eggs • 1 tsp vanilla extract • 1/2 cup whole milk • 1/2 cup unsweetened shredded coconut For the Chocolate Coating: • 3 cups powdered sugar • 1/3 cup cocoa powder • 1/2 cup boiling water • 1 tsp vanilla extract • 1 Tbsp butter Instructions: 1. Preheat your oven to 350°F (175°C). Grease and line a 9x9-inch baking pan with parchment paper. 2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt. 3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. 4. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined. 5. Pour the batter into the prepared pan and spread it evenly. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. 6. Let the cake cool completely in the pan on a wire rack. 7. Once the cake is cool, cut it into squares or rectangles. 8. Here’s the full recipe so you can make it for your table ✨ Daiwara: Ingredients: 2 cups flour 2 tsp baking powder 2 tbsp ghee 2 eggs ¼ cup buttermilk Oil for frying Desiccated coconut Method: • Sift flour and baking powder. • Add ghee and rub in until you get a breadcrumb texture. • Whisk eggs and buttermilk together, then add to the flour. • Knead into a soft, silky dough. • Rest for 15 minutes. • Roll out and cut into circles. • Fry in hot oil until puffed and golden. • While warm, dip into syrup and roll in coconut or pistachios. 🌹 Rose & Cardamom Syrup 2 cups sugar 1½ cups water Cardamom seeds Rose water or rose essence Boil sugar and water until slightly thickened. Save this recipe and try it! 👇 🍓Strawberry Mi•Su Ingredients: Base • 1 pack ladyfinger biscuits (±200 g) • 1½ cups milk • 3 tbsp strawberry syrup or strawberry milk powder (feel free to use a strawberry milkshake, in this case, omit the milk from the recipe. ) Cream Layer • 250 g mascarpone cheese • 1 cup fresh cream (whipping cream) • 3 tbsp icing sugar • 1 tsp vanilla extract Fruit Layer • 1½ cups fresh strawberries, sliced Topping • strawberry pops (as needed) • 200 g white chocolate • 1 tbsp coconut oil • Freeze-dried strawberry powder or crushed strawberries (optional) Method 1️⃣ Mix the milk and strawberry syrup or powder to make pink strawberry milk. 2️⃣ Whip the fresh cream until soft peaks form. In another bowl combine mascarpone, icing sugar and vanilla, then gently fold in the whipped cream until smooth and fluffy. 3️⃣ Quickly dip each ladyfinger into the strawberry milk and arrange them in a dish to form the base. 4️⃣ Spread a layer of mascarpone cream over the biscuits and add sliced strawberries. 5️⃣ Repeat with another layer of soaked ladyfingers and mascarpone cream. 6️⃣ Arrange the chocolate-covered strawberry pops on top. 7️⃣ Melt the white chocolate and stir in the coconut oil. Milk Tart Firni Recipe Ingredients • 4 Tbsp Taystee Wheat • A handful of vermicelli • 1 L milk • 1 tin condensed milk • 3 Tbsp sugar (optional) • 1 tsp vanilla essence • 1/2 cup of fresh cream • ground cinnamon Method 1. In a pot, toast the semolina in melted ghee, vermicelli and milk. Cook on low heat, stirring gently until the grains soften. 2. Add the condensed milk, sugar (if using), vanilla and cream. 3. Continue stirring until the firni thickens to a creamy consistency. To Assemble (Milk Tart Style Layer) 1. Crush condensed milk rusks and spread them in the base of a serving dish or glasses. 2. Today, the Instant Pot steps in like a quiet kitchen assistant, keeping all the depth while saving you time. And yes… it still gives that velvety, stretchy spoon-pull we love. Instant Pot Chicken Haleem Ingredients: Grains & Lentils ¼ cup urad dal ¼ cup pink dal (masoor dal) ¼ cup pearl barley ¼ cup oats chicken fillets (400–500g), finely shredded Whole Spices 1 small cinnamon stick 3 cloves 3 green cardamom pods 1 bay leaf 8–10 fresh curry leaves Base 2 tbsp ghee 1 tbsp olive oil 2 medium onions, sliced 2 tomatoes, liquidized Ground Spices 1½ tsp salt 1½ tsp dhana jeeru 1 tsp rough chilli ½ tsp turmeric 1 tbsp ginger garlic paste 1½–2 tbsp Shan Nihari Spice Finishing 1 cup prepared beef stock 1–2 tbsp fresh lemon juice ⸻ Method 1️⃣ Rinse urad dal, pink dal & pearl barley until water runs clear. (No need to rinse oats.) 2️⃣ On Sauté mode, heat ghee & olive oil. Add onions and cook until lightly golden. 3️⃣ Add cinnamon, cloves, cardamom, bay leaf & curry leaves. Let them bloom in the oil. Deglaze with ¼ cup water. 4️⃣ Add shredded chicken + all ground spices. Cook 3–5 minutes until fragrant. 5️⃣ Add rinsed lentils, barley, oats, liquidized tomatoes & 1½ cups water. Stir well. 6️⃣ Pressure cook on High for 20 minutes. Natural release 10 minutes. 7️⃣ Blend with a stick blender until smooth and creamy. The oats help create that rich, luscious thickness. 8️⃣ Stir in beef stock & lemon juice. Simmer 3–5 minutes. Adjust consistency with hot water if needed. ⸻ Garnish (This is where the magic happens) Chilli oil: heat 3 tbsp oil + 1 tsp chilli flakes.
