Kika presents a prototype version of her “Ocean in a Box” grow your own seaweed kit at the Framtidsreceptet food sustainability labs in Umeå last week. It’s a fascinating project, bringing in expertise from nutritionists, oceanographers, product designers and biologists. This was the first of the projects to result in a home-cooked meal, and the results were delicious!

Celebrating a successful few days prototyping five great new ideas for the future of sustainable food at our labs in Umeå last week. The five selected projects, each focusing on creating a more sustainable plate of food in quite different ways, all went through a journey of rapid discovery and creative innovation.
With participants and experts attending in person from Sweden, Portugal, Germany and Croatia and more contributing online, the five projects went from idea to practical demonstration over three intense days of collaboration, experimentation and testing.
The projects are:
Flavourful Journeys - an interactive documentary by Francisca Siza
ReJar - vacuum jar resealing system by David Cox
Office Farms - onsite food cultivation service by Kasimir Suter Winter
Local Food Swap - AI-assisted ingredient substitution by Sofia Nordèn
