Ever since i listened to the British Food History podcast episode on retro foods with @dr_neil_buttery and @brionymaybakes I’ve craving quiche.
Not the namby-pamby veggie kind (although they can be nice) but a proper shortcrust pastry case made with LARD and stuffed with bacon, cheese & eggs. OK I did let a little onion into the mix too.
I’m not sure ‘Lorraine’ would approve but had to be done & it was bloody delicious. Now where’s my pineapple and cheese hedgehog?😂
(It seemed a shame to waste the left over pastry so I made a couple of jam tarts too, which frankly I haven’t done since the kids were little. Does anyone else still do that?.)

Every now and then I splash out on an old book. I’ve been umming and ahing about this one for a while but finally talked myself into it.
I’m a huge fan of Florence White and the work she did to raise the profile of English Food between the wars, so I’m really looking forward to reading more about her life.

I’m sharing a recipe for Petworth shortcake with the paid subscribers. It comes from The Petworth Book of Country House Cooking by Peter Brears (2015). @petworthnt was the home of the Leconfield family from 1150 before it was gifted to the National trust. It is situated a few miles from Burton Mill in West Sussex (the subject of last week’s podcast).
The extended version of the interview I did with Tom Amery of the @thewatercressco is also available now on the Substack ahead of the forthcoming @watercressfest on 17 May 2026.
Don’t forget that it’s National Mills weekend 9-10 May across the country so do check out the @themillsarchive to find out where your nearest watermill or windmill is. Burton Mill in Sussex will be open on Sunday if you want to see stone ground flour being milled.
