Building a vegan anchor for the For All Things Good (@forallthingsgoodbk ) menu meant starting with fundamentals and letting process do the work. Chef Matt Diaz (@mpdiaz86 ) keeps his black bean tlayudita rooted in restraint: a long-simmered bean paste, warmed gently on the griddle, and a crisp base that stays sturdy without turning brittle.⁠ ⁠ French shallots (@fruitvegfromfr ) drive the flavor logic throughout. Diaz fries them until crisp, then folds the scraps into a mushroom-shallot asiento, extending both flavor and yield. A shallot-chile oil adds depth without heat overtaking the plate. Tomorrow is the big day— the 6th annual Bowl of ‘Zole™ Brooklyn! Before we start sipping on mezcal and sampling pozole, we have one final chef annoincement... @forallthingsgoodbk is a Cafe & Molino (spanish for “mill”) in Bed Stuy, Brooklyn that was born out of a search for fresh tortillas in NYC. In the process, founders @mpdiaz86 and @carlos_mvera became obsessed with making them! They sourced different landraces of heirloom corn, experimented with different methods of nixtamalizing it, and attended talks, seminars, and symposiums on corn. Today, their goal is to bring high-quality masa and tortillas to Bed Stuy, and educate consumers on the importance of supporting and maintaining a sustainable econonmy for heirloom corn production and consumption.
