Colombian single origin
Grown by Luz Helena Salazar at her farm Finca La Leona in Armenia, Quindío, this Pink Bourbon lot showcases her precision and decades of experience as one of Colombia’s most respected specialty coffee producers. Sitting at 1,450 m above sea level, the coffee thrives in fertile volcanic soil and a temperate microclimate ideal for slow cherry development. After selective hand-picking, cherries are fermented for 24 hours in open tanks, depulped, then fermented again for 36 hours before being washed and dried under the sun for 14 days. This careful double-fermentation method enhances the variety’s clean, layered profile.
The result is a refined cup with vibrant blackberry and floral notes, balanced by brown sugar sweetness and citrus acidity. Luz Helena’s commitment to quality, transparency, and innovation - supported by her family at @cofi_net - continues to elevate Colombian microlots and highlight the skill of female producers in specialty coffee.

But here’s the thing… coffee actually needs a few days to rest after roasting before it tastes its best.
When coffee is roasted, lots of gas gets trapped inside the beans. Over the next few days, that gas slowly escapes - this is called degassing.
Too fresh = wild, uneven shots
Rested (around 5–14 days) = sweeter, smoother, better extractions
Too old = flat, dull and lifeless
So while coffee is technically freshest straight after roasting, it actually tastes better once it’s had time to breathe.
That’s why we roast every single week, so your coffee lands right in the sweet spot.
