Do you hear that? It’s the sound of the best German brass band in the land playing in Dave Grohl Alley! This Saturday May 9 we’re hosting our friends from the Saxon Brass Band and releasing our Maibock Spring Bock Lager at our annual Maifest!
The band will start playing at 4pm sharp (they’re quite prompt) and we’ll do a toast to welcome Maibock to the tap list.
We’ve adjusted the recipe a bit this year to make it a bit more pale in color and bright in flavor. At 7.2% it’s a perfect way to welcome the Spring season with a bit of heft to it to get us through the brisk rainy days ahead. For this year’s batch, we busted out our old brewing books and did a traditional decoction mash and it truly shows in the finished beer. This process involves removing a portion of the mash, grain and all, and boiling it before adding it back into the main mash. While the grain bill consists only of pilsner malt, the decoction process creates maillard reactions that adds depth of flavor: bread dough, pretzel, and biscuit. A high finishing gravity gives Maibock a pleasant sweetness and German noble hops balance it out with some floral goodness. PROST!
We always roast up some brats or Darlene Dogs to feed the hungry Saxons and we usually have some extras to share.
Traditionally, Maibock was brewed in Winter and cellared over the colder months until May when it was tapped to celebrate the new season. Of course, we are not that well prepared and our Maibock will be a bit of a kellerbock. But it is a KILLER Bock!
