dream taco bar!! â¨details below:
of course some @modamocktails for the perfect refreshmentđâđŠ
For the steak marinade combine:
⢠1 can Modelo
⢠Juice of 2 limes
⢠1 tbsp soy sauce
⢠1 bunch cilantro, chopped
⢠1/2 jalapeùo, finely diced
Let the steak sit in the marinade for at least 5 hours (overnight is even better) then grill or sear until beautifully charred and juicy. Slice thinly against the grain.
For the crispy taco cauliflower:
Cut 1 head of cauliflower into florets and toss with:
⢠2 tbsp cornstarch
⢠2 tbsp olive oil
⢠1 tsp smoked paprika
⢠1 tsp chili powder
⢠1/2 tsp cumin
⢠1/2 tsp garlic powder
⢠1/2 tsp onion powder
⢠Big pinch salt + black pepper
Bake at 425 until deeply golden and crisp around the edges. The paprika and chili powder give it that perfect orangey taco color đśď¸
Quick guac situation:
⢠3 avocados
⢠Juice of 1 lime
⢠1/2 white onion, finely diced
⢠Remaining 1/2 jalapeùo, diced
⢠Handful chopped cilantro
⢠Salt to taste
Mash together and try not to eat it straight from the bowl before dinner.
And of course homemade flour tortillas because once you start making them itâs hard to go back:
⢠2 cups flour
⢠2 tsp salt
⢠5 tbsp olive oil
⢠2/3 cup warm water
Mix, rest the dough, roll out, then cook on a screaming hot pan for about 30 seconds per side until puffed and golden.
