I found myself in Yonago, western Tottori on an attempt to ascend the highest mountain in the Chūgoku region, Mount Misen (highest reachable summit among the Daisen mountains). It would be my second night in the city, one more than I had expected — I had taken the wrong trail at the national park a few hours prior, and was looking to get my "closure" before I left for my next city. This shop was the final stop of my food run, after returning to Yonago after enjoying a drink at an izakaya in Matsue, Shimane (courtesy of the JR area pass which I abused liberally during my trip). 🍻
Delicate broth, savoury with a sweet aftertaste from the dashi. Slippery and chewy noodles with a satisfying, firm (but not hard) bite. A little firmer than the "mochi-mochi" texture I remember from the noodles at Hanamaru, but definitely more satiating. 🍜
Turns out 油かす or "abura kasu" is beef tallow cracklings!! Light and crispy with the slightly musty flavour of fry oil. Just enough to keep me craving more. 🐮
In the centre of the bowl is some brownish-green kelp or seaweed — it melts in the mouth. "Meccha" uma(m)i! I remember there were some bonito shreds or some kind of dried shredded fish flakes. Thinly sliced kamaboko/fishcake had good texture, firm and a little spongy when bitten into. Topped with the crunch of fresh negi/spring onion for a simple yet remarkable bowl in the 山陰 San'in region of Japan. 🐟🍥
The kind man running the restaurant apologized profusely when I asked for fried rice and he said he was out of rice. I don't blame him - it was 16 minutes to midnight when I tried to order. Should have ordered a lemon sour to go with the food though 😂🍋
Ambience and autumn leaf for vibe check. Yonago is a vibe yo. Recommended time of visit: now (or whenever). 🍁
