I’m thrilled to contribute to the first edition of the new coffee magazine @readingstill_ ! Published by the lovely people of @bonjourjacob_ , the magazine features beautiful photography, a deep-dive into Lisbon’s coffee scene, and some wonderfully written articles. I wrote about pre-batch espresso, as I felt I wasn’t receiving enough grief online this month šŸ˜…. More seriously, pre-batched espresso is a topic I get asked about often, and I believe the conversation around it tends to skip one salient point: pre-batched espresso, the way it is done at @projectzero.coffee and @beta_coffee in Australia, tastes *better* than fresh espresso. The reason is based in sound coffee science. Want to know more? Steamed Americano. Hoffacano. Foam Americano. Black Cappuccino. Hot Aerocano. The Englishman’s Americano. Whatever this is, it works. Only @jimseven could take an Americano, make it more complicated, and somehow make it better. His recipe calls for pulling your espresso shot, letting it rest for a minute, skimming the crema, adding it to 160g of cold water, then steaming everything together until it reaches around 60 to 70°C. But because we wanted more time to steam, and because apparently this drink wasn’t complicated enough yet, we tried it differently. Instead of using 160g of cold water, we used 160g of ice made from our own brewing water. Same water, colder starting point, more time under the steam wand. Would you try the Hoffacano, or is this too much work for an Americano?
