One pan marry me chicken risotto 😮💨🤌🏻 this was so tasty, packed full of nutrients and required minimal clean up which we absolutely loveeee.
Using @nutranaturals unflavoured bone broth as per usual!! (Use code MICHAELAWEBB to save) I’ll be sharing how I’m adding bone broth into my daily routine while I complete the 30 day bone broth challenge hehe. Who wants to join in with me?
Recipe:
800-900g chicken thigh, sliced thinly
1/2 Red onion, diced
Solanato or cherry tomatoes
2-3 cloves garlic, minced
1 tbsp unflavoured bone broth from @nutranaturals (you could use chicken or beef here!)
1 tbsp paprika
1/2 tbsp italian herbs
Salt & pepper
2 cups of arborio rice
200ml coconut cream
1-2 cups of a spinach
Optional: add parmesan cheese or nutritional yeast for a cheesier taste
Sauté the onion with coconut oil until nearly translucent then add in tomatoes. Cook until starting to soften and use your spatula to tap on them to help soften/break them down a little.
Once the tomatoes have began to soften, add in the garlic and sauté for a minute.
Add in the chicken, paprika, Italian herbs, salt & pepper. Cook until the chicken is browned.
Stir in the rice, bone broth and enough water to cover about 1cm above the rice.
Bring to the boil on high then turn down to low, cover with a lid and simmer for about 10 minutes or until the rice is fully cooked.
Remove from heat, stir through coconut cream & spinach then serve.

What I spent on groceries this week 🛒💰🥑 shopping mostly organic where I can, for me & my husband. We got a few extra items this week that were a top up (pb, dog treats, laundry powder etc) or not usually in our weekly shop (e.g. $12.50 for a bag of corn chips🤪). We do a bigger shop on Saturday and then another top up shop Wednesday so everything stays fresh, I plan out our meals and write a list so I only get what we need/will use and nothing goes to waste😌

This healthy collagen mocha caramel slice is seriously SO good. You’ve got to try🤭
Base:
1 cup packed almond flour
1 tbsp coconut oil, melted
1 tbsp maple syrup
1 tsp vanilla
Collagen mocha caramel layer:
1/2 cup smooth peanut butter
1/2 cup + 2 tbsp pure maple syrup
2 x sachets @beforeyouspeakcoffee Collagen Mocha
Pinch of sea salt
Chocolate layer:
50g dark chocolate (the higher % the better)
1 tbsp coconut oil
Pre-heat oven to 180 degrees celsius.
Mix base ingredients, pour into a silicone loaf pan & bake for 12 mins then set aside in the fridge or freezer to cool. While that’s baking/cooling, make the mocha caramel.
Mix all ingredients for the collagen mocha caramel layer together until fully combined. Taste and add more maple if you want it sweeter. Add to the base layer (once its cooled) and set in the freezer.
Melt the chocolate with the coconut oil and pour over the top of the caramel layer (once set). Leave in the freezer to set for at least 20-30 mins before slicing up. Enjoy xx
