It’s recently come to my attention that McKenna’s dad thinks he’s the king of packing lazy lunches… and honestly I can’t let that happen.
So naturally I made chopped Italian sliders loaded with ham turkey salami pepperoni bacon lettuce tomato melty cheese crunchy chips and enough sauce to make a nap mandatory afterward.
And somehow these ridiculously easy sliders ended up tasting better than half the sandwiches people wait 45 minutes for at restaurants.
Soft toasted buns crispy chips salty meats melted cheese and that perfect chopped sandwich bite where everything hits at once.
Honestly this might be the greatest lazy lunch of all time.

I’ve been getting a lot of comments lately asking where these dinner ideas even come from and honestly… I wish I had a good answer.
This time they wanted grape Kool-Aid for dinner.
So naturally I spent hours glazing a ham with grape Kool-Aid like a man who has completely lost touch with reality.
But somehow… it actually worked.
Sweet smoky salty sticky and honestly one of the juiciest hams I’ve ever made. The outside caramelized perfectly and the grape flavor somehow turned into this weirdly addictive glaze that shouldn’t make sense but absolutely does.
At this point I genuinely don’t know if I’m creating recipes or just making emotionally charged decisions in my kitchen.

My kids asked for Olive Garden for dinner and as an Italian I took that personally.
Because back in my day Olive Garden wasn’t just dinner. Unlimited breadsticks meant somebody in the family got paid that week.
So instead of loading everybody into the car I spent the next two hours making homemade chicken parmesan sandwiches from scratch.
Crispy fried chicken creamy homemade tomato parmesan sauce fresh pesto melted mozzarella garlic butter toasted bread… basically everything you’d want chicken parm to be.
Honestly this might be one of the best sandwiches I’ve ever made.

My kids asked me if I could make Five Guys burgers at home… but better.
And honestly that felt like a challenge I couldn’t ignore.
Because when it comes to classic burgers Five Guys absolutely nails the basics. Juicy beef crispy edges melty American cheese buttery toasted buns and somehow that foil wrap makes everything taste even better.
The secret is keeping it simple.
Good beef cooked on a ripping hot surface caramelized onions fresh toppings and soft buns toasted in butter. That’s it.
The foil wrap at the end is the game changer though. It steams everything together just enough to give you that authentic burger joint texture.
Messy juicy cheesy and way too easy to crush two of these in one sitting.
Way better than spending $67 at the drive-thru for the whole family 😂

So today we’re making seed oil-free Nashville hot chicken sliders. Crispy chicken tossed in hot oil, topped with coleslaw, pickles, and ranch — all made with @chosenfoods
I volunteered to chaperone another field trip and ended up responsible for a group of first graders… again. This time we went to a petting farm, which feels like a bold choice for kids who don’t listen and animals that definitely remember faces.
And then there’s Gunnar… which is how feeding a pig turned into me getting bit and spending the bus ride home getting mogged by first graders.
So yeah… lunch went pretty well.
