I’m so proud of my husband, Wes for finishing this huge renovation project! He is truly the most talented and hardworking human I have ever met ♥️ This renovation was probably the hardest thing he/we have ever been through but I know who ever is lucky enough to get it will really appreciate the hard work we put into it! Chimichurri (for grilled meats) 1 Bunch parsley (washed) 1 Bunch cilantro ( sub for another parsley if cilantro isn’t for you) 1 Large lemon, Juiced and zested 1/2 cup avocado oil or mild olive oil 1 Tablespoon capers or sub green olives (3 tablespoons) 1 Large garlic clove (toasted) 2 Tablespoons red wine vinegar 2 Teaspoons Dijon mustard 1 Tablespoons each - Fresh oregano - Fresh rosemary - Fresh thyme Pinch of red chili flakes Few cracks of fresh black pepper Salt to taste may be fine due to capers Couple ice cubes (optional) - Pick and wash all herbs 🌿 - Add all ingredients to blender - Blend on high till smooth but no longer than 30 seconds - Enjoy, store cold for up to 2 days - Shake if separated #diy #chef #chimichurri

Le Pastis Gascon puts apple butter (tutorial in reels) to good use! I had the opportunity to try this tart in France a few years ago. I dream about it to this day. It’s normally made with only filo dough, but I adore rich and flaky pie crust. So that’s what I did. Pie crust on the bottom, rich apple butter in the middle, and cinnamon sugared filo top! This tart would make a lovely ending to a holiday feast!

APPLE BUTTER makes (9 pints) 1/2 Bushel of apples (about 30 apples) 1 cup packed brown sugar 1 long stick of cinnamon (optional) 1 Vanilla bean and pod (optional) - Wash apples - Core and slice apples ( skin on) - Add to large pot - On medium heat add a cup of water and lid - Steam apples till soft - Add Brown sugar and blend in pot with stick blender - Add spices (optional) - Stir frequently and slowly cook apples down (5-6 hours) - Once it taste like a Carmel, pull off the heat, and cool - Blend and pass for a velvet consistency (optional) - Freeze or can apple butter for later! #diy #chef #apple #holiday

Fermented Calabrian Chilis in Oil Clean the peppers Weigh peppers Weigh kosher salt 2% of the peppers weight Weight in grams (peppers) X .02 = 2% of kosher salt *Example 600 x .02 ‎ = 12 grams kosher salt Add salt to the calabrian peppers and pulse in a food processor (fine) Add mixture to a clean ceramic bowl cover peppers with plastic wrap and push out any air bubbles Place in a cool dark place and cover the top with a clean kitchen towel Check every day by smelling the peppers, they should be fruity and have a nice aroma After 2-3 days place fermented peppers in glass jars (I like @weckjars ) and cover with sunflower oil or canola oil. Other oils May harden in fridge and you don’t want that. Keep in fridge for several months Enjoy !! #chef #garden #diy #cooking #peppers

Hot Fudge Sauce (makes over a quart so feel free to do half the recipe) 2 cups corn syrup 2 cups heavy cream -pinch of salt 1/4 cup nice cocoa powder (I use askinosie chocolate ) 8 Oz of nice chocolate (chopped to a pea size) 1/2 Vanilla bean scraped (optional) - Add cream and corn syrup to a pot with a pinch of salt - Bring to a boil - Pour the hot cream syrup over the chocolate - Whisk gently till fudge is glossy - Strain to catch any cocoa powder solids - Store in the fridge - Warm in the microwave for 15-30 seconds before serving - Enjoy!! #diy #chef #christmas

Clarified butter is a great staple to have in your kitchen. It has so many applications! I use it as an alternative to straight butter because it’s essentially LACTOSE FREE! It also has a high smoke point so you can get it hot and it won’t splatter like whole butter will. It will also last longer than butter because it is free of water and milk solids, this is what allows butter to go rancid. I’ll list a few other applications you can use, but the possibilities are endless, because it’s fat! I’m using @landolakesktchn Extra Creamy Unsalted Butter, because it is at 82% butter fat which means more clarified butter for me to keep. The lower butter fat %, the more skimming you will have to do and less finished product you will have at the end. Uses - As a somewhat non-stick alternative cooking eggs, holiday cooking, pancakes/crepes, coating baking pans + dusting with flour, perfect grilled cheeses etc. - Indian cooking, this works as a substitute for ghee which is essentially the same but cooked longer. - Decadent sauces such as, Hollandaise, dip for crab legs, garlic bread, popcorn topping. Easy and Impressive Popovers Makes 6 glorious puffs 2 cups whole milk (room temp) 4 medium eggs (room temp and whisked hard) 1.25 teaspoons kosher salt 2 cups AP flour (I like King Arthur all- purpose flour) Melted clarified butter or Ghee (for bottoms of molds) Steps Below -Pull your milk and eggs out they need to be at room temp for this to pop off! you can speed up the milk for 30 seconds in the microwave ;) -Pre-heat your oven to 450 and place pans (popover pan and half sheet pan) in the oven to heat up (all ovens are different , so it may take a few attempts to find the perfect temperature zone) for reference I have a still gas oven. - Sift flour and whisk in salt - In a separate bowl whisk your eggs till foamy and then whisk in room temp milk - Now whisk dry ingredients into wet - After about 20 min. of heating, using oven mitts, pull hot pans out of oven - Coat bottom of the molds with clarified butter - Pour batter 3/4 of the way up in molds - Place popovers back in the oven and bake for 30 mins at 450 - Don’t open the oven door! - Turn the oven down to 350 and finish baking for another 30 min - Serve immediately with your favorite butter, jams, and fancy salts Enjoy!
