Okay this has been on repeat in our house lately. San Choi Bows my way. Fresh, crunchy, packed with flavour and gives takeaway vibes without feeling heavy šš¶ļøš„¬
WHAT YOU NEED:
⢠600g pork mince
⢠2 carrots, one shredded, one diced
⢠1 packet sliced mushrooms

⢠1 head of butter lettuce, leaves separated
⢠1 bunch spring onion, sliced
⢠1 tbsp sesame oil
⢠1 tbsp siracha sauce
⢠2 tbsp hoisin sauce
⢠2 tbsp sweet chilli sauce
⢠2 tbsp soy sauce
⢠1 tbsp honey
⢠3 garlic cloves
⢠1 brown onion
⢠Sesame seeds
⢠1 packet vermicelli noodles

METHOD:
Cook sliced onion + garlic in a pan until soft and fragrant. Add pork mince and cook through. Add diced carrots and mushrooms and cook until softened.
Add crispy chilli oil, hoisin sauce, siracha, sweet chilli sauce, soy sauce, sesame oil, honey, salt + pepper. Stir everything together and cook for a few more minutes until glossy and full of flavour.
Meanwhile cook vermicelli noodles and prep shredded carrot + spring onion.
Sprinkle sesame seeds over the mince mixture and serve everything separately.
