Jerk
Jerk seasoning techniques were used and created by the( Maroons)Escaped Enslaved Africans in Portland Parish Jamaica. After connecting with the Arawak people, a people indigenous to the Island of Jamaica, the Maroons combined the spices of the Island with their own knowledge of herbs and spices to prevent meat from spoiling in the hot climate. This played a major role in the fight for independence allowing the Maroons to have good food for nutrition and energy to fight the British. The British soldiers did not have this technology which put them at a major disadvantage in the Hot mountainous terrain of Jamaica allowing the Maroons to seek their freedom,
