Most recently as Culinary Director of the iconic Icebergs Dining Room and Bar. Over the course of his career he has worked alongside some of the world’s leading chefs, including time in the internationally acclaimed Momofuku Seiobo, which earned three chef’s hats, Restaurant of the Year and a place among the World’s Top 100 Restaurants during his tenure. Alex was also a national finalist for Young Chef of the Year in the Appetite for Excellence Awards and has served as a state and national judge for the Delicious Produce Awards, championing Australia’s growers and producers. More importantly, Alex and his beautiful family are Shoalhaven locals and have called the region home for close to a decade. Fact. For years his dream was simple: to one day create something of his own in a regional setting. A place where he could truly express his talent: sourcing extraordinary produce from around the world, working with the land around him, and turning it into something unforgettable on the plate.
