here we go, part III of our spring series is here! it starts wednesday (may 13) @malpractice.pdx
as spring is in full swing, we’re starting to get sweeter sugar snap peas and i wanted to highlight their crunch and sweetness by giving them a nice char and serving it with a bright basil yogurt.
some of my friends have asked me to bring back the cigars, since they enjoyed them at a previous pop up. so they’re back for this menu and served with a green strawberry agrodolce. it’s savory, tart, and sweet with crispy layers of phyllo.
i love sea beans since they’re salty and crunchy. i added them as a garnish with the sautéed asparagus for the last menu, but this time they’ll be more front and center with the sea beans and fava bean salad.
the malfatti was the surprise hit of the last menu. didn’t expect the nettle love to be so high! so nettle is coming back for a long agnolotti that will be stuffed with purslane, soy ricotta and more nettle. i love nettle as much as you do! so i’m pretty ecstatic to continue highlighting them.
and finally our final savory dish will be a creamy spring risotto featuring asparagus and ramps and finishing it with a hazelnut parm.
strawberries are getting sweeter and sweeter, so i had to bring them in for a strawberry tiramisu dessert for this menu.

this week we’re adding skewers to the menu with tamarind-gochujang sauce and chimichurri over a carrot purée (not pictured).
the skewers were such a hit for the special event @malpractice.pdx over the weekend that the team wanted it on the menu.
i couldn’t say no! i love skewers, so they always make an appearance in some way.
can’t wait for you to try it this week. see you sometime this week.
