Hey Everyone, and welcome to my page.
My name is Kenan Rabah, I am a baker in Philly and recently I decided to take a huge step and start my own business. Majdal bakery has been a dream of mine ever since I started baking professionally about 5 years ago, and it’s finally coming true. My bakery is named after my hometown Majdal Shams in the Golan Heights region. Majdal Shams is a place that gave me so much love and inspiration, a place that taught me what it means to be kind and compassionate. Majdal is filled with good hard working people whom for hundreds of years have been living in sync with this fertile land, planting it with apples and cherries to this day and for decades to come.
Because the Golan Heights falls under occupation, most of it’s people don’t have a nationality, it simply says on our travel documents “UNDEFINED”, and I never understood how crazy this situation was, until I moved to the United States and people started asking me “where are you from?“, without knowing how to answer. I am hoping that by doing what I know how to do best, which is baking, I can DEFINE this place once again and take you with me on a journey to introduce you all to this amazing and crazy culture.

Rhubarb Labneh Tart 🌸
Nothing makes me happier than rhubarb season.
This tart has some toasted pecan, rich labneh white chocolate cremeux, and roasted rhubarb jam, all topped with whipped pabneh, more pecans, and a beautiful flower.

Stone Fruit Cardamom Bun 🍑
Brown butter cardamom bun, featuring the last of our stone fruit jam from last summer (peach and apricot), topped with this sexy toasted milk glaze, and candied buckwheat groats.
We will only have it for few weeks, until we run out of jam !

This week at Quaker Kitchen, we welcomed Chef Kenan from @majdalbakery for a culinary session on Borek. Together, we handmade our own phyllo dough, stretched it until paper thin and filled it with your choice of chicken or cheese filling.
Za’atar and Makdous is back!!
Whenever we make fatayer and manakeesh back home, we serve them accompanied by vegetables and spreads, and one of these sides is Makdous, fermented baby eggplants stuffed with peppers, garlic, and walnuts.
My favorite bite was a piece of za’atar manakeesh wrapped around some makdous and tomatoes, and that’s exactly what I tried to recreate with this pastry. It’s bold, flavorful, a little tangy, herby, magical, and it tastes like home!

Plum Sumac Sticky Bun!! Last summer we made soooooo many different jams because we knew they will come in handy for the winter. This sticky bun featuring our plum jam, with some toffee pecans, and a sprinkle of sumac!!! A creation of our lovely pastry chef @lindseyohl 💚

Valentine’s Day Preorders are Live!!

All orders are for pickup on Saturday 2/14 during our business hours 8am-4pm. We will also have a very limited amount of each individual tart on Saturday along with some other new special treats that I will post about later.
