Hi guys and welcome to “Cooking for My Kids So They Never Forget They Are, In Fact, South African,” a new series I am starting 🥹🫶🏼
I find it so incredible how food helps us as expats to stay connected to our roots and family traditions 🤗🫶🏼
So first up…I’m baking 🥲😆😬
Milk Tart, or Melktert (/ˈmɛlktɛrt/, Afrikaans) is a beloved South African dessert known to be created by the Dutch settlers in the “Cape” (South Africa) consisting of a sweet pastry crust containing a custard filling made from milk, flour, sugar and eggs.
This dessert offers a taste of South African heritage and evokes a sense of nostalgia for many South Africans around the world, including myself 🥹 I fondly remember my sister making this when I was young and the smell always filled our home on weekends.
This milk tart recipe is a perfect example of a simple yet profound way to keep our South African heritage alive, no matter where in the world we might be 🌍

P.s there are many variations including a simpler method of using tennis biscuits for the base ..but I was feeling adventurous and wanted to try making the base. It was actually so delish! And honestly if I can do it anyone can 😆
Ingredients:
For the Base: • 1/2 cup (1 stick) butter, softened • 2/3 cup granulated sugar • 1 large egg • 1 teaspoon vanilla extract(I used Nomu vanilla paste from @mahdina_uk ) • 1 teaspoon baking powder • 2 cups all-purpose flour
For the Filling: • 3 large eggs • 2 tablespoons cornstarch • 2 tblsp all-purpose flour • 1 litre of milk • 3/4 cup granulated sugar • 3 tablespoons butter • 1 teaspoon vanilla extract • 1/2 teaspoon ground cinnamon for sprinkling and 1 stick whole cinnamon for steeping in milk
Method
Pre heat your oven to 180 degrees.
In a bowl, mix together butter with the sugar until it has dissolved. Add in the baking powder, vanilla and egg. Mix well. Slowly add the flour to the bowl and mix until the dough comes together. I kneaded with my hands too. Roll it between baking sheet which makes it easier to work with. I looked at a few different recipes and methods ..and it seems like about 0.5cm thic was the consensus 😆

Easter is coming… and we’re doing dessert properly this year 🐣✨
Think chocolate eggs, something creamy, something pink… and a dessert that’s just a little bit over the top (as it should be).
These No-Bake Pink Milk Cheesecake Easter Eggs are fun, indulgent, and guaranteed to steal the show — made with NOMU Reduced Sugar Pink Milk for that nostalgic, strawberry-vanilla sweetness 💗
🛒 Ingredients
• 5 tbsp NOMU Reduced Sugar Pink Milk
• 1 tin condensed milk
• 250ml cream
• 7.5ml gelatine, dissolved in ½ cup boiling water
• Juice of 1 lemon 🍋
• 1 tub smooth cream cheese
• 1 packet Tennis biscuits
• 200g butter, melted
• 6–8 large hollow chocolate Easter eggs 🍫
• Pomegranate seeds, to garnish

👩🍳 Method (Short & Sweet) 1. Prepare gelatine and set aside. 2. Blitz biscuits with melted butter to form a crumb. 3. Mix NOMU Pink Milk with a little cream to form a smooth paste. 4. Whisk cream cheese, lemon juice, condensed milk and Pink Milk paste together. 5. Whip cream until thick, then fold into the mixture. Stir in gelatine. 6. Carefully halve chocolate eggs using a warm knife. 7. Press biscuit crumb into each egg base, then fill with cheesecake mixture. 8. Chill for at least 2 hours until set. 9. Top with extra crumbs and pomegranate seeds to serve.

• 90g softened butter, cubed
• 1 large egg yolk
• ½ tsp rosewater (or to taste)

👩🍳 Method (Short & Sweet) 1. Mix butter with sugar (sachet 1) until smooth (don’t over-cream). Add egg yolk and rosewater. 2. Add cookie mix (sachet 2) and rose petals, mixing into a soft dough. 3. Roll dough 1cm thick between baking paper, chill 1 hour. 4. Preheat oven to 160°C (fan). Cut into sticks and bake 10–12 minutes until lightly golden. Cool completely. 5. Melt white chocolate, tint pink if using, and dip one end of each cookie. 6. Sprinkle with rose petals and chill to set.

Chocolate cake:

• ¼ cup vegetable oil (or 60g melted butter)
• ½ cup milk
Ganache topping:
• 85g good-quality dark chocolate 🍫
• 65g cream

👩🍳 Method 1. Grease a 20cm non-stick frying pan and set aside. 2. Whisk eggs until foamy, then whisk in oil (or butter) and milk. Add cake mix and whisk until smooth. 3. Pour batter into the pan, cover tightly with foil and a lid to seal in moisture. 4. Cook on very low heat for 25–30 minutes until cooked through. Cool completely. 5. Gently melt chocolate and cream together until smooth and glossy. 6. Pour over the cake, spread, slice… and enjoy 🍰
