Building flavor in a sauce isnt just about adding everything into a pot till its magically "sauce"... its about layering, knowing which items to add first and subsequently so that each item can bloom and pillar itself under the next.... all of which takes, you guessed it; patience!
Im sure you know how I was feeling about some things throughout the year...and I think I did pretty well at containing myself... but along with my rage, grief, and sorrow, and straight up hatred for some of it, I (gladly) can still say that I have so much to be thankful for and I have so much appreciation for you all. Here's to another one.

"Uncle Jimmie's fried rice"🍚🍚🍚.....every year around the holidays when my family would get together at my uncle's house, each family unit had to bring a dish to add to the already sizeable spread my aunty had prepared. Most of the elders had their go-to/assigned dish that they brought every year. My dad's was his "famous"(amoungst my family anyway)fried rice. Or as the rest of the family called it, "Uncle jimmie's fried rice." A deceptively simple and strange looking setup when it comes to what you think of as fried rice, but if you think again about what's typically in fried rice...egg, meat of some kind, maybe some garlic/onions/ginger, some sort of seasoning....in the case of my dad, I imagine he felt well ill have all of those things but the kind that I wanna eat alot of.... so... Chinese sausage, salted duck eggs, pickled ginger, garlic chili paste, green onions, lime juice, and about 15 other things(seasonings), altogether a mountain of unforgettable flavor.... and thankfully every year to this day I still get to eat it per his taste and hand, and he knows that its the thing we all wait for every single year... so i can cant help but want to find a way to get some of you guys to try it!... obviously my dad wont do this for you but ive got his recipe that he let me jot down years ago whilst watching him...and im getting there little by little.... I think... hopefully... hahaha leme know....
