a LOT of Cocoa butter /
• It is and has always been discredited or seen as something negative when developing a cocoa profile. The point is that this is not the case, cocoa butter is the fat of the cocoa bean, and as with the olive, it is extracted in the same way.
Within the cocoa profiles that we work with in LOT, there are cocoa beans that naturally have up to 42% fat. At LOT we make many products with cocoa fat, replacing butters or oils.

La cuestiĂłn es que esto no es asĂ, la manteca de cacao es la grasa de la semilla del cacao, y al igual que ocurre con la aceituna, se extrae de la misma forma. Dentro de los perfiles de cacao que trabajamos mucho, hay cacao en grano que de forma natural tiene hasta un 42% de grasa.
