Thingyan is a time of renewal and togetherness across Myanmar. It’s usually marked with celebration, water throwing, and gathering with family and friends. But this year is different. Following the devastating earthquake in Mandalay, thousands of people are in urgent need of support. Homes and communities have been destroyed, and access to basic medical care is limited. In response, 100% of all sales on our website during Thingyan will go directly to Medical Action Myanmar (MAM), who are providing emergency medical aid on the ground. A powerful 7.7-magnitude earthquake struck central Myanmar on March 28, causing widespread devastation. The death toll has surpassed 2,700, with over 4,500 injured and many more displaced. Entire communities have been destroyed, and with the monsoon season fast approaching, access to medical care, clean water, and essential supplies is more critical than ever. Every update from the ground has been heartbreaking. A group of us are taking on a 70km walk in 18 hours to raise funds for Medical Action Myanmar (MAM). They are working tirelessly to provide urgent medical care, distribute essential supplies, and assist in rebuilding affected communities—all in areas where it has been nearly impossible to get help in. U Wunna and his friends stopping for a cup of tea whilst mending a bridge on the road from A La Chaung to Pindaya šŸƒā  ⁠ With tea being a significant part of Myanmar’s agriculture, naturally it is also embedded in Burmese life. Tea is the national beverage. Often drunk before or after meals, offered when receiving guests or even eaten as a meal or a snack, it is very hard to avoid tea in some form when going about your day in Myanmar ā˜•ļøšŸ‡²šŸ‡²

Aye Aye's unbelievably delicious vegan Aubergine and Chilli Lahpet curry šŸ˜ šŸƒā  ⁠ Packed full of ginger, turmeric, garlic, chilli and of course Lahpet, this dish certainly isn't lacking flavour šŸ˜‹ šŸ™‹ā€ā™€ļø šŸ™‹ā€ā™‚ļøā  ⁠ INGREDIENTS:⁠ Tinned chopped tomatoes⁠ Chilli⁠ Garlic⁠ Ginger⁠ Vegetable stock⁠ Onion⁠ Chilli Lahpet⁠ Rice and chilli oil (@rice_over_everything ) to serve⁠ Burmese Bean & Nut Mix⁠ ⁠ MARINADE:⁠ ⁠ Aubergine⁠ Vegetable oil⁠ Chopped Lahpet⁠ Two cloves of garlic⁠ Honey⁠ One lime⁠ One tsp chilli powder⁠ One tsp tumeric powder⁠ ⁠ METHOD:⁠ ⁠ 1. Chop the aubergine into chunks and marinade with the ingredients listed above. Leave for at least 30 minutes⁠. Be sure to really massage the chopped Lahpet into the aubergine.⁠ ⁠ 2. Heat ,oil in a pan and add onion garlic chilli and ginger. SautĆ© for 10 minutes⁠ ⁠ 3. Add the chopped tomatoes and the vegetable stock⁠ ⁠ 4. Add the marinaded aubergine and leave to cook with the lid on for about 40 minutes⁠.⁠ ⁠ 5. Remove the lid, season and let the liquid reduce. Add Original Lahpet 5 minutes from end to incorporate the lovely whole leaves.⁠ ⁠ 5. Serve with rice, chilli oil, crunchy Beans and Nuts and a garnish of fresh coriander. ⁠ ⁠ 6. Enjoy!⁠

Kickstarting our Thursday with Wah Te’s tea and toast with a simple tomato salad šŸƒšŸ³#BrunchOfChampions⁠ ⁠ Htein Lin Aung’s recipe is as follows:⁠ ⁠ INGREDIENTS:⁠ Chopped Lahpet⁠ Toat⁠ Egg⁠ Garlic⁠ Chilli⁠ Coriander⁠ ⁠ M ETHOD:⁠ ​1. Roast your tomatoes⁠ ​2. Finely chop your garlic and chillis⁠ 3. Poach/fry/boil your egg⁠ 4. Spread the chopped Lahpet liberally over the toast, followed by your egg and then a good sprinkle of the garlic and chilli (also we love it with Rice Over Everything chilli oil @rice_over_everything !!)⁠ 5. Garnish with Coriander and enjoy!
