Meet the Producer — Franz Zeimetz
We’re grateful to have hosted renowned producer @franzzeimetz of @lostorigincoffee from Panama City, sharing his craft, philosophy, and intention behind the competition-winning coffees he has become known for.
It has been a busy and meaningful week here at the roastery, and we’re excited to wrap up the week with today’s session. Thank you to everyone who joined us and spent the afternoon together over coffee.
We're thrilled to have @franzzeimetz from Lost Origin Coffee Lab with us next week, for two special sessions.
@lostorigincoffee is a processing facility based in Panama City, exploring how controlled fermentation can unlock new expressions of coffee. Inspired by craft beer brewing, they work closely with coffee producers in Boquete and Volcan to design precise processing methods, using custom-built stainless steel tanks and selected yeast and bacteria strains to guide flavour development.
1) Cupping & Sharing
Franz will showcase curated lots of Lost Origin's 2026 harvest and share more about the producers and processing methods behind each coffee. This session is open to all roasters, green buyers, and coffee professionals.

2) Brewing & Sharing
During this intimate two hour session, Franz and the Glyph team will be brewing four coffees from Lost Origin's latest harvest. Each guest will be able to enjoy each of these coffees, while understanding more about the philosophy and methods behind what they do at Lost Origin.

Pacamara | Natural from Lost Origin x Finca La Estrella in Panama
This one is a collaboration more than a century in the making. Finca La Estrella has been in Alto Quiel, Boquete since 1914, founded by Antonio Saraceni, an Italian immigrant who brought his background in viticulture to Panamanian coffee. The farm has passed through successive generations of women in the Rios Saraceni family ever since, now led by Giovanna Boutet Saraceni, who continues that legacy with the same care the land has always received.
The processing is where Lost Origin comes in. Founded by Juan-Andres Typaldos and Franz Zeimetz of Casa Bruja Brewery, they apply brewing logic to coffee, using controlled fermentation in stainless steel vessels with precise temperature, pressure, and agitation. This lot was harvested on 11 December 2024, fermented for four days with custom cultures, and dried over 36 days in a regulated environment. The result speaks for itself.

Lost Origin = the beginning and the end of my trips in Panama.
It has always been a loop. First stop after landing and the last stop before taking off.
In such short 3 years they have achieved so much: setting the trend, breaking the boundaries and still pushing for excellence in a beer brewery in Panama City. I really don’t know anything else cooler than this team in coffee.
