At Finca El Limón in Santa Ana, Honduras, Jocsan Otoniel Mendoza and his brother work side by side managing about 5.6 hectares of coffee land high in the mountains of La Paz. Their farm sits between 1600 and 1650 meters above sea level, where cooler temperatures and mountain soils create ideal conditions for growing high-quality coffee. Together they cultivate several varieties, including Lempira, Catuai, Typica, Anacafe 14, and Parainema, while experimenting with different processing methods to continually improve quality. But producing specialty coffee requires more than just great growing conditions. It requires investment, patience, and a willingness to keep learning. Over the past few years, Jocsan has expanded his drying patios and built a new coffee storage warehouse to better manage his harvest and improve consistency. His long-term goal is to build a cupping lab where farmers in the region can taste and evaluate their coffee together. Because great coffee doesn’t just happen at origin. It’s built season by season by farmers committed to their craft. Meet Jocsan Otoniel Mendoza, our new coffee partner in Santa Ana, La Paz, Honduras. He’s not just a farmer, but a teacher, brother, and builder of his community. Jocsan grew up working alongside his father transporting coffee. When he was 14 years old, their farm only produced about 500 pounds of coffee cherries each year, which they sold locally. Coffee wasn’t yet a passion, but more a means of survival. At 18 years old, Jocsan’s father passed away, and suddenly, the responsibility of supporting his family fell on him. Together with his mother and younger brothers, they committed to improving their farm and learning everything they could about growing better coffee. Lost and Found Coffee is proud to partner with Jocsan and his family. Around here, everyone calls her Kami. Kami grew up on this hillside in Tarrazú, learning coffee the way most of us learn to ride a bike, from our parents. She’s turned coffee on the drying tables, cooked family meals during harvest, and stood on the porch making pour overs from the very same beans her parents picked that week. Now she lives in two worlds. During the week, Kami is a college student studying engineering. Her dream? To come back and design machinery that makes her dad’s life easier and helps small farms like theirs thrive. On the weekends and school breaks, she’s back here: on the farm, in the kitchen, on the porch… and with Begonia, her white mare who she says, “genuinely heals my soul.” When we say we work with small, family farms, this is what we mean. It’s not just about coffee for us, it’s about daughters and sons, futures and dreams, horses and honey hives, late-night study sessions and early-morning harvests. “If you do things well, I refuse to believe they won’t turn out well.” The first time Seilyn said this to us, she wasn’t trying to sound inspiring. She was just telling the truth about how she lives her life. On her hillside farm in Tarrazú, that sentence is more like a compass than a quote. It’s how she decides what to plant, how to care for the soil, how to treat the people who pick her cherries, and how she raises her three kids in the middle of it all. Doing things well, for her, starts underground. Instead of chasing quick fixes or the cheapest way forward, she started by healing the soil. Healthier soil means stronger plants. Stronger plants mean sweeter cherries. Sweeter cherries mean better coffee… and better opportunities for everyone who touches it along the way. It also means refusing to treat pickers as invisible. She pays them fairly, creates special projects just for them (like the women’s lot she separated and processed on its own), and makes sure their work is seen and honored, not just blended into the background so someone else can profit. “Doing things well” is why she’s willing to experiment, fail, and try again. It’s there in the risks she took with her new Black Honey process. It’s there in the way she opened her doors and her story to us long before there were any guarantees. It’s there every time she chooses patience over shortcuts, people over profit, and long-term impact over quick wins. Coffee isn’t just “caffeine water”, it’s one of the most nutrient-dense daily rituals most of us have. 🫘✨ Every bean is filled with antioxidants, minerals like magnesium and potassium, and natural compounds that help you feel focused and energized. The caveat? How we roast those beans can totally change what actually ends up in your cup. Roasting is where all the magic and the tradeoffs happen. Turn the heat up or down and you’re changing flavor, acidity, how intense the caffeine feels, and even how your stomach reacts. The wild part is that the same coffee from the same farm can taste like bright berries and flowers at a light roast, cozy chocolate and caramel at a medium roast, or smoky and bold at a dark roast. Same origin story. Completely different personality. If peace had a sound, it would be this place in Tarrazú, Costa Rica. 🌿☕️ This is Seilyn: the woman behind some of the most beautiful coffee we’ve ever tasted, one of the biggest hearts we’ve ever met, and the first farmer we ever partnered with. She lives and works here with her family and three kids, on a hillside farm they’ve slowly been bringing back to life. When they first started this project, the goal was simple and urgent: as a mom, she wanted to give her children a better future. But as they began paying attention to the land, the tired soil, the struggling plants, the disappearing birds and bees, she realized the story was bigger than just staying afloat. So they changed the question from: “How do we get more out of the farm?” to “What does the farm need from us?” They started healing the soil. Then the soil healed the plants. And the plants brought back the bees, the flowers, and the birds. That health is now reaching real people: their pickers, their neighbors, their kids… and eventually, all of us holding a cup of their coffee on the other side of the world. One of our favorite things she said: “As the soil got healthier, the plant was better… and we were better.” And her life motto: “If you do things well, I refuse to believe they won’t turn out well.” That’s the heartbeat of this partnership.
