Introducing the next class in our workshop series - Whole Grain Sourdough, Distilled.
In this 6-hour workshop, we will explore two different base doughsâone 100% wheat, the other 100% ryeâfrom start to finish. They will serve models to learn about different concepts when creating sourdough breads from whole grains.
This class is intermediate to advanced theory distilled into straightforward practice. While extensive baking and sourdough experience is not needed to participate, wholegrain sourdough is a particularly unforgiving domain of breadmaking, so dedicated and inquisitive hobby bakers will fare better than occasional dabblers.

âMilk Breadâ đ kept me warm on an extremely cold studio day. đĽś
My walk to the studio in windy 12° weather had to be quick and direct. Fortunately, Lost Bread Companyâone of my favorite Philly bakeriesâis just a block away and open on weekends, making it easy to pick up beautiful subjects to paint.
I had previously postponed painting this specific bread because of its tight crumb and low contrast compared to a typical sourdough. To capture the subtle texture, I decided to paint this piece a lil larger than my usual scale to better translate the surface with my brush.
@lostbreadco uses organic flour, milk, butter, sugar, and yeast to create this fluffy, pillow-like loaf. They incorporate a roux made with spelt flour and milk, which gives the bread a lightness reminiscent of fresh snow. It is absolutely delicious, landing somewhere between sweet and savory, similar to a brioche but even more tender.

You asked, we took forever, but weâre finally ready â LOST BREAD CLASSES ARE HERE! Come join us at our bakery in Olde Kensington in Philadelphia for a series of bread making workshops. First up: MILK BREAD!
Milk bread is a lightly sweetened and enriched dough used to create a crazy variety of baked goods that are soft, fluffy and keep forever.Â
In this ~3 hour workshop over coffee and snacks, weâll teach youâfrom start to finishâhow to make soft Shokupan bread and rolls, sticky cardamom buns, sweet/savory swirled breads, and the lightest donuts. For more details and to sign up, head to the link in our bio!

đžTO OUR DEAREST RYE BREAD ENTHUSIASTSđž
We will not have our 100% Rye breads on the shelves until further notice. Unfortunately our deck oven went down last week and the fix was not as quick and easy as we had originally hoped - if you can imagine it, our bread team has been mixing and shaping bread on premises and then driving our hearth loaves over to our friends at @merzbachers.bakery to use their oven in the evenings (Pete and his crew are literal angels!!). Because the Rye loaves do not travel well, weâve made the call to put them on pause for now.
Rest assured they will be back when our oven is up and running. In the meantime, please hold tight and say an extra prayer for our bakers during this trying time! Thank you in advance for your understanding đŤ đĽ˛
