This slow cooked chuck roast is a weekly dish in my household, but tonight I whipped up a new marinade and it was incredibly delish. Sweet, savory and a bit of tang, super yum. If you cook for a crew of hungry folks this is a great dish to add into your rotation, eat it in tacos, a bowl, over mash or rice and voila!
Cook your chuck roast 1 hour per lb at 325 degrees in a covered Dutch oven
I usually throw the whole thing in as is, but this time I cut it into thirds so that marinade would soak in better
For the marinade I did:
1/2 cup tamari
2 table spoons white miso paste
2 table spoons honey
2 teaspoons chopped garlic
1 teaspoon ish of ground ginger
1 table spoons honey rice wine vinegar
Toss marinade in - cover and cook.
Once the cook time is passed, take it out remove the lid and shred with a fork. Turn the oven up to 400° put it back in without the lid for another 15 minutes to get crispy.
I served over basmati with cilantro, I made a little miso honey Greek yogurt sauce and drizzled over top! #dinner #homechef #chuckroast
Loquat season! I'd never had this fruit before, but apparently they grow abundantly in San Diego and are truly delish! My lovely friend gifted me a huge basket and I decided to take a stab at making jam for my first time! It wasn't too difficult, the most time consuming part was peeling the fruit and removing the seeds - but aside from that it's just adding sugar, seasoning, cooking it down. I did forget to mention in the video that I let it simmer for about 25 minutes on low :) I've been eating this on toast and matzah with butter and my boys have been loving it with cream cheese. Tonight I had it with some Comte cheese and I almost passed out it was so good.
