Chef Lung Ly (@lobsta ) transforms the menu's scallop dish into a layered vegan option at 93’ Til (@_ninetythreetil ), using meaty king oyster mushrooms as the centerpiece. Set atop smoky sunchoke purée and garnished with blood orange, micro arugula, and crisp sunchoke chips, the dish plays with texture, acidity, and restraint. “I’m always looking for ways to push my cooks to work with ingredients they’re not familiar with,” says Ly, who trained in Portland before returning to Houston to open his Montrose neighborhood restaurant and record bar.
