Maaaaaaan!! This oneās been a long time coming. I used to practice for Chopped on slow shifts at old jobs, dreaming up dishes with the weirdest combos. Now I finally get the chance to step into the kitchen and compete for real.

One Night Onlyā¦
A private dining experience hosted at Soho House Toronto, curated by the lovely @baileydinelle , featuring a Caribbean inspired menu to kick off Caribana Weekend.
The menu was inspired by my travels and experiences around the Caribbean, with a dash of my southern culinary foundation. From saltfish Johnny cakes, to plantains foster over bread pudding, this menu was this American kidās homage to Caribbean food ways.
Here we are a whole 2 weeks later and Iām still overwhelmed by the immense amount of support I received from the whole Soho team, the love from our friends who came out to support and dine with us
This was an amazing experience from conceptualization to planning and prep, but to sell out in another country and see all the smiling faces connecting and dining together made my night.

Last summer at Family Reunion, Devan Cunningham (@ll_chefd ) rolled up to the assorted crew of chefs vibing on the last night with a batch of chicken wings like none of us had ever had before. While planning out the food for our recent #BlackFoodFolks x Kann event in Portland, Bryan Furman (@bs_pitmaster ), who blessed us with his incredible BBQ, had the idea to invite Devan to join the party.
This time, I got to spend some time in the kitchen with him and see how the magic was made. Many thanks to Bryan, Devan, the Kann team, and everyone involved for making the whole event happen. It means so much to me that people are excited enough about what @BlackFoodFolks is about to travel and invest their time and effort into contributing. Shout out to @tiavanich and @gg30000 for jumping on the idea of hosting immediately.

#ad Last week I had the pleasure of visiting @greenerpastureschicken out in Elgin, Texas to see firsthand how theyāre raising their birds.
Pasture raised chickens, mobile coops moved daily, and a vertically integrated operation from farm to processing to packaging. Always inspiring to see people committed to doing things the right way.
The end product? Some of the best chicken Iāve ever tasted.
For me, building Fat Fatās Chicken Shack is about bringing back the nostalgic neighborhood chicken spot.. just done right. And it starts with the chicken.

LINEAGE
I canāt think of a better way to celebrate Black History Month than to gather four chefs from diverse backgrounds, experiences, and regions. Our challenge was to identify commonalities and shared traits between the cuisines of West Africa, the Caribbean, and the American South, and I believe we succeeded. Our guests were invited to savor our culinary creations while we shared stories of coming up in the culinary industry as four Black chefs across Canada and America.
From a smoky Ghanaian/Gullah Geechee twist on Jollof to a banginā Octopus curry infused with flavors from Seychelles, to a stunning Cassava bread course accompanied by dips from across the diaspora, one thing became evident: the culinary roots run deep, and the lineage was on full display.
