the story of little adobe
when we first moved to signal mountain, the woods around our home slowly began to introduce themselves. one morning, a deer appeared in our backyard, her coat the deepest adobe hue i had ever seen. it was so vibrant and luminous, it glowed against the green of the trees.
i told my partner about her, and he affectionately named her “little adobe.” from then on she returned often, as if she belonged to our story.
one day, while i was tending the garden, little adobe paused her grazing and met my gaze. i smiled and sent love, and to my amazement, she slowly began walking towards me. in that stillness, i felt the heart of this mountain open.
we were home.
the veil between the everyday and the magical lifted, and i was reminded that beauty, presence, and connection are living forces.
our bakehouse carries her name in honor of the magic of presence. every loaf, pastry, dish, and herbal offering is made with quiet intention, so you can taste the love and nourishment in every bite.

ciabatta rolls 🥪
one of my favorite ways to eat a sandwich is on a ciabatta roll. these rolls are golden and crusty on the outside with a tender, chewy inside full of airy holes… exactly how a rustic ciabatta roll should feel.

there’s a quiet kind of poetry in watching dough come alive. glutinous bread usually steals the show but i wanted to showcase the beauty of gluten free dough, which is so often misunderstood.

known in italy as “big bombs,” these aren’t quite donuts… they’re pillowy sweet breads, soft and bready inside, sometimes simple, sometimes filled with cream or marmalade.
for variety, i dusted some in this batch with sugar and glazed others, while only filling a couple with marmalade. already they feel like a sweet fit for future porch pickups. i can’t wait to dream up more seasonal + botanical flavors 🏵️

in italy, mornings begin at the neighborhood café where locals stand at the counter with a cappuccino and a cornetto, the beloved cousin of the french croissant.
cornetto literally means “little horn” in italian, from corno (horn). the name comes from the pastry’s crescent shape, which resembles a small horn or crescent moon.
my version of this italian favorite is both gluten-free and plant-based, filled with almond frangipane infused with orange blossom water, then topped with almond petals and a veil of powdered sugar.

pasta e panzanella
inspired by cucina povera, this is my first attempt at making homemade vegan gluten-free pasta… it turned out to be delicious but definitely needs a few tweaks for the texture. the sauce is just a simple slow cooked tomato sauce with hand crushed jarred whole tomatoes, salt, olive oil, and fresh basil.
i used day old ciabatta rolls from my last dish to make torn croutons for the panzanella salad. such a yummy end of summer treat with fresh basil from the garden 💚
