A show that reveals our collective industry trauma, the drug and alcohol abuse (and sexual abuse), the stress, the heat, the small margins, tight quarters, culture clashes and constant struggle.
It crossed my mind that we don’t often talk about our social ethos and intention behind opening Lighthouse.
Lighthouse in many ways is a reaction to a BOH & FOH (back of house and front of house) culture that my brother and I saw and experienced over the years and wanted to eliminate from hospitality, or at least at our restaurant.
Egomaniacal chefs spewing hate and rage, managers with anger management issues, “family meals” made from the cheapest of ingredients, physical, emotional and sexual harassment and abuse of power etc will not stand at our place.
Lighthouse from inception, would be different. With an open kitchen that doesn’t allow yelling or scorching, that takes great care in building teams that work well together, insisting on respectful communication and openness.
Our ZERO TOLERANCE Of ABUSE
Was tested early on. Offenders would be fired immediately.
Whenever there is tension we take the time to address it and fix it.
Our staff eats well, gets paid well and BOH has revenue share. Everyone is treated with respect, everyone has a voice.
Whenever we mess up, and sometimes we do, we apologize and work to make it better.
After 3 of the most challenging years we’ve ever had, we are proud to still adhere to our core values, to a manifesto written long before we ever opened Lighthouse. The code of conduct we helped create later with

We still love what we do, still do it with care and doing it alongside a great team and call many of our previous staff friends and family.
