Strawberries & cream SHOKUPAN It took quite a lot to create this but i’m proud of it:’) Actually more difficult than making sourdough LOL. Think: soft, fluffy, creamy (if u put butter) and fresh. Each loaf has 50g of fresh strawberries OKAY (hence the price). So full on strawberry flavor (with a bit of tang naturally from strawberries). Also, it is SUPER SOFT, like pillow. Just a different type of bread. I like to eat this HK-style…. Seeded & Malted sourdough loaf YAS FOLKS WE R BACK. Took a vvvv long hiatus (rest…. New job… recipe testing…) BUT back now. I’ve been v excited testing this recipe and it is my favorite sourdough loaf. Yes although i do make many flavors, this is still my classic because i can eat this all day and never get sick of it. For me, sourdough = this loaf. It’s very nutty with a subtle sweetness due to the malted flour. It also has more flavor and texture from seeds. And it is just PERFECT with butter - both the butteriness and the flavor of this loaf is more distinct. Also, the flour blend i used for this…. Cannot find in SG anymore. Millet rye sourdough So I basically started exploring millet as an ingredient and fell down the health rabbit hole…. millet turned out to be super nutritious, despite commonly called ‘bird food’. In TCM, millet helps to strengthen the spleen, stomach and kidneys. It also aids indigestion, and helps promote better quality sleep. It is recommended for old folks to take a bowl of millet porridge before sleep every night (as per my TCM books/research). Just google, too many benefits to list. Tldr; it’s healthy *lol*. ON TO THE FLAVOURS……. This loaf is mixed with cooked millet and a bit of rye - adding a subtle nuttiness to this loaf. Overall, it is a very mild-tasting loaf (some would call it plain but not me) and I also find the tanginess is reduced so less sour! As usual, I love this with butter! Five black multigrain sourdough Yep. It’s the instant oats from Quaker, mixed into this dough. For health. And FLAVAAAAA. Besides the health benefits, the instant oats give a subtle sweetness to this loaf while letting the sourdough tanginess shine. A tiny bit of butter mixed in also gives some creaminess and a very slightly flaky crust. Like I said, I’m in my ‘health-is-wealth’ era and this is a nutritious loaf! Besides the sourdough benefits, I like these oats for its use of black ingredients like black sesame seeds, black rice and black beans - helps with hair growth and supposedly prevents white hair per TCM.
