Who do you think has better food? I’ve been in Portugal for 2 weeks now so only seems right to make a Portuguese dish! This is Arroz de Marisco (seafood rice) and I see it as Portugals answer to the Spanish paella. A lot of flavour packed into this saucy rice, I used some monster sized prawns to top this off and used the shells as the stock base. Everyone should treat themselves to a boy dinner once in a while, this is a thick sirloin steak with bĆ©arnaise sauce made from all that goodness in the pan. Full recipe is below if you want to treat yourself šŸ‘ŠšŸ¼ Ingredients: Thick sirloin steak 6 garlic cloves 2 shallots 6 sprigs thyme 1 rosemary 3 tarragon 100g butter 2 British lion egg yolks (@egg_recipes ) Tbsp truffle paste 2 tbsp white wine vinegar Salt and black pepper to taste Heavily salt your steak and sear in a pan on medium/high heat, turning every minute or so until you have a nice sear. You want the steak to still be a bit undercooked, take it out and rest. To the same pan add the shallots, garlic, herbs and butter. Add the steak back in and baste till desired doneness then take out and rest. Continue to cook the butter till lightly browned. Place a metal bowl over a pot with lightly simmering water, add the egg yolks, truffle paste and vinegar, whisk continuously till a bit fluffy. Take of the heat and whisk in your brown butter from the pan. You should end up with a nice thick sauce, if it’s not thick enough place back over heat and whisk. Chop the shallots and garlic and mix into the bĆ©arnaise, season with salt and pepper to taste. Safe. #steak #bearnaise #steakdinner #recipe

Munch after hours - Sirloin steak donburi A couple of components here that take a bit of time, but nothing difficult about it. The steak gets salted and left in the fridge overnight, that’s gonna season the steak deeply and result in a much better crust later on. At the same time some egg yolks get cured in soy sauce and mirin, giving them that jammy texture and loads of umami. Served in top of sushi rice, with chives and fried shallots and a sauce consisting of soy, sake, mirin, rice vinegar, bonito flakes and dried shiitake. Send this to him, if he’s serious he’ll make you steak šŸ˜‰ I found this beautiful ribeye at my butchers and just knew I had to buy it, the marbling was crazy. Served it with a kind of cafe de Paris butter, using up the basting butter, shallots, garlic and rosemary from the pan. Skinny fries and a simple tomato salad to go along with it. The perfect chocolate chip cookie, full detailed recipe is up in substack now! I think the perfect chocolate chip cookie is soft and gooey in the middle, with those crispy edges, a golden bottom and that chewy texture. I used to live around the corner from a bakery which I think sells the best cookies in London, a place called le choux in Ladbroke Grove.
