I never made bark before but I couldnāt stop thinking about chile lime mango and cornā¦so I put it in dark chocolate! This also works with finely diced dried mango, but I like the freeze dried better!! I might add even more next time. This could work with any type of chocolate, too. The corn, man. The corn. So much crunch!
1 cup Trader Joeās Raw Pumpkin Seeds
1 teaspoon olive oil
1 tablespoon Trader Joeās Multi-Floral & Clover Honey
1-1/2 teaspoon Trader Joeās Chile Lime Seasoning
10 oz bag Trader Joeās 72% Dark Chocolate Chips
1/3 cup Trader Joeās Giant Peruvian Inca Corn, chopped/crushed
1/3 cup Trader Joeās Freeze Dried Mango, chopped
Chile lime seasoning to taste
Preheat oven to 350°F. Place pumpkin seeds on a parchment-lined baking sheet. Roast for 5 minutes.
In a small bowl, combine the olive oil, honey, and chile lime seasoning. Add the roasted pepitas and toss until well coated. Pour pepitas back on the baking sheet and roast for 5 more minutes. Remove and cool.
In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between bursts. Donāt overheat. Once melted and smooth, spread evenly on a parchment-lined baking sheet to 1/4-inch thick. Immediately top with crushed corn, freeze dried mango, and 1/3 cup toasted chile lime pumpkin seeds. Lightly press everything into the chocolate and sprinkle with a touch more chile lime seasoning.
Allow to cool on the counter until hard, 1-2 hours, or place in the refrigerator for 30 to 60 minutes. Break into pieces. Store at room temperature in an airtight container.

Inspired by elote, biscuits and butter š§ these are definitely buttery, but we all need more butter in our life. The salty chile lime seasoning and cheese balance the sweetness of this cornbread mix beautifully. Itās savory, sweet, rich. Let them cool a bit before digging in though; they get a little crumbly when too hot (says the woman who couldnāt wait to try them). The box says to use oill in the batter, but theyāre baked in a stick of butter. Itās fine without! An extra sprinkle of the seasoning blend before going into the oven wouldnāt hurt either! If youāre into that sort of thing š
1/2 cup (1 stick) Trader Joeās Unsalted Butter
2 tablespoon TJs Multi-Floral & Clover Honey
3 teaspoons Trader Joeās Chile Lime Seasoning, divided
1 box Trader Joeās Cornbread Mix
1 egg
3/4 cup half and half
1 cup Nuestro Queso crumbled cotija cheese (TJs!!)
1 cup frozen Trader Joeās Roasted Corn, thawed and drained
Preheat oven to 375F.
In a microwave-safe bowl, melt the butter. Add the honey and 2 teaspoons of chile lime seasoning and mix until well combined. Reserve 2 tablespoons of chile lime butter and set aside. Pour the remaining butter into an 8x8-inch baking pan.
In a large mixing bowl, combine the egg, half and half, and 1 teaspoon chile lime seasoning. Add the dry cornbread mix and combine. Mix in the cotija cheese and corn. Donāt overmix.
Pour the batter over the melted butter in the baking dish. Smooth the top. Bake for 35-40 minutes.
While still warm in the pan, cut the biscuits into nine portions. Brush the tops with the remaining chile lime honey butter. Let cool for 10-15 minutes. Remove and serve.
