Lake Day Veggie Bowl with Shrimp
Serves 1-2
2 cups Cabbage ( I used the Cabbage slaw in the bag)
2 small Sweet Potatoes (peeled and diced)
1 cup Asparagus (rinsed and cut into 2-3 sections)
1 cup Frozen Corn (keep frozen until ready to use)
1/4 cup Red Onion
Feta Cheese
4 Tbsp Fresh Lemon Juice
3 Tbsp Olive Oil
1 tsp Dijon Mustard
2 tsp Honey
2 Sprigs Green Onions
1 Tbsp Butter
8 Large Shrimp
Smoked Paprika
Garlic Powder
Crushed Red Pepper
Slaw
Add Cabbage and Green onions to a bowl
Add 1 tsp of Honey
Add 1 Tbsp of Olive Oil
Add 1 Tbsp of Lemon Juice
Mix together and set aside
1/2 tsp each Smoked Paprika & Garlic Powder
Dressing
1 Tbsp Olive Oil
2 Tbsp Lemon Juice
1 tsp Honey
Dijon Mustard
Pinch Crushed Red Pepper
Mix together and set aside
Preheat oven to 425
Add Sweet Potatoes to a shallow pan
Season with garlic powder and smoked paprika.
Drizzle with olive oil
Mix to incorporate
Add to oven for about 10 minutes or until potatoes are soften on the inside and slightly charred on the outside
In a skillet medium heat melt 1/2 Tbsp of butter with 1/2 Tbsp olive oil
Add asparagus, sprinkle with seasonings and saute until tender crisp (about 5 minutes)
Remove from the pan
Add frozen corn to the skillet, sprinkle with seasonings and saute for about 3-4 minutes
Remove from the pan
Add more butter and olive oil, then add the shrimp and sprinkle with the seasonings
Saute about 3 minutes per side or until done (do not overcook)
Remove from heat
Lets Build the Bowl
Add cabbage to the bottom of the bowl
Add sweet potatoes on top
Add asparagus then corn
Add shrimp on top or around your bowl
Top with feta cheese
Sprinkle red onions
Drizzle dressing over
Garnish with parsley(optional)

Apple Pie Pastry Deluxe
2 Granny Smith Apples (peel and slice)
1 Tbsp Butter
1 Tbsp Flour
1 Cup Water
1/2 tsp Vanilla Extract
1 Tbsp Cinnamon
2 Tbsp each Sugar and Brown Sugar
1/2 Tbsp Nutmeg
Pinch Salt
Chopped Pecans
Powdered Sugar (optional)
Topping
1/2 Container Philadelphia Brown Sugar and Cinnamon Cream Cheese
1/4 Cup Cool Whip
1/4 Cup Sweetened Condensed Milk
Frozen Puff Pastry (unthawed) cut into 4x4 pieces 8 pieces
In medium low skillet melt butter and olive oil
Add apple slices
Season with cinnamon and nutmeg
Cook for about 3 -4 minutes
Sprinkle with flour and stir to incorporate
Add water
Cook until water is heated
Add sugars, salt and vanilla
Cook until apples have softened about 3-4 minutes (do not overcook)
Remove from heat
Mix together topping, can add to a pastry bag, or ziploc bag and cut at the bottom
Bake puff pastry according to directions
Build Dessert
Open pastry into 2 pieces
Spoon some apple filling on top of bottom layer of pastry
Add creamy topping to apples and pecans
Add pastry top on top and garnish with powder sugar(optional)

2 Cups Pineapple Juice(no sugar added)
About 2-3 inches Ginger
2 Cloves Garlic
1/2 Cup Soy Sauce (low sodium)
1/2 Cup Coconut Liquid Amino
1/2 Cup Brown Sugar
1/2 Sweet Onion
2 Tbsps Chili Garlic Sauce(more if you like it spicy)
2 tsp Thyme
2 tsp Sweet Paprika
2 tsp Salt
2 Ribeye Steaks(rinse.pat dry and cut into chunks)
Put first 11 ingredients in a blender
Blend well
Put the steaks in a ziploc bag
Pour half of the blended sauce over
Marinade for at least 3 hrs
Pour the remaining marinade in a skillet
Cook until sauce thickens about 10 minutes stir constantly
Once sauce has thickened
Remove from heat and set aside
When ready to cook your steaks
Remove from the marinade(pat dry)
Heat skillet to medium high
Add Tbsp olive oil
Saute until desired doneness
Once steaks are done
Pour sauce over
Cook for about a minute
Remove from heat
Rice
1 Cup Jasmine Rice
2 Cups Coconut Milk
1 tsp Ginger Powder
1 tsp Garlic Powder and Salt
Cook Rice according to package direction
Use water if you don’t want a creamy texture
Add the garlic, ginger powder and salt to the water or milk before you add the
rice
Relish
3/4 Cup Fresh Pineapple (diced)
1/4 Cup Red Onion(diced)
1 Firm Roma Tomato(diced)
3/4 Jalapeno Pepper (deseeded and diced)
Juice from 1/2 Lime
Pinch Salt
Mix all the ingredients together and refrigerate until ready to use
Add your rice to a bowl or plate
Top with steak
Top with relish
Drizzle extra sauce over(optional)

Cajun Seafood Soup
Prep 30 Minutes
Cook Time 30 Minutes
Serves 6
1 tbsp Butter
1 tbsp Olive Oil
3/4 Cup Sweet Potato ( peeled and diced)
5 Small Red Potates( peeled and diced)
1/2 Cup Red Pepper (diced)
1/2 Cup Sweet Onion (diced)
1/2 Cup Fresh Sliced Mushrooms
1 tbsp CRAVE cajun seasoning (more if needed)
1 tsp Garlic (minced)
4 Cups Chicken Broth
1/2 Cup Clam Juice
1/2 Cup Heavy Cream
1/2 lb of each Shrimp.*Mussels.Scallops
2-3 Handfuls of Fresh Spinach
Garnish Crushed Red Pepper Flakes( Sprinkle, optional)
*for the mussels, I use frozen cooked mussels. I let them thaw and took them out of the shell (keep refrigerated until ready to use).
In a medium sized skillet
Melt the butter and olive oil together over medium heat.
Add both potatoes
Saute for about 8 minutes
Add peppers.onions and mushrooms to the potatoes
Cook for about 5 minutes
Sprinkle flour over the veggies
Stir until fully incorporated
Add broth
Cook for about 3 minutes
Add garlic, clam juice and cream
Continue to cook until the potatoes are soft (not mushy)
Add shrimp
Cook for about two minutes
Add Scallops
Cook for a couple of minutes
Add cooked mussels and spinach
Stir until spinach wilts
Adjust your seasoning
Garnish with crushed red peppers
