+++ TOTALLI OVERLOADED +++ Was working from home (or at least trying to), and ended up making a spontaneous canned mackerel toast — loosely inspired by @kanal__61 's“Mussel Toast”. 🥪 🐟 Started with a plain spelt toast, though I’ll definitely use my roommate’s sourdough next time. Fried the toast in homemade mayo, mixed with the mackerel oil from the tin. Added a few salted tomato slices as base and then casually slapped the mackerel on top. This again was topped with radishes and some dabs of that fishy mayo, Danish fried onions (hoping to make my own soon), toasted sesame seeds, and a bit of finely chopped green Thai chili. After taking the photos, I grated some horseradish on top — unexpectedly great touch. Takeaway: sourdough over spelt toast. And next time, I’d skip the chili and try chopped cornichons or capers instead. @defalconlunchclub might be on our menu soon 😎 #PantryCooking #SimpleEats #SourdoughToast #HomeOfficeLunch #FishOnToast
