Homemade roasted tomatillo salsa is even better the second day! First time properly making salsa and gotta say, no complaints! . Blistered the tomatillos in the oven first and then blended with healthy amounts of garlic, jalapeño, cilantro, lime, and a dash of cumin. Salt and pepper to taste, if any. Then added diced local tomatoes for added texture. Decided to try my hand at growing veggies from seeds. Made them little starter pots out of an old egg carton and used a trusty wine opener to make some drain holes. Happy Saturday. Had some leftover zucchini and carrots so decided to make some muffins! 🥕 Ingredients include: half a large grated zucchini, 2 carrots, 1/3 cup coconut oil, 1/3 maple syrup, 2 eggs, 1 tsp cinnamon, 1tsp baking powder, 1/2 tsp baking soda, dash of nutmeg and vanilla, splash of oat milk, cup of flower, 3/4 cup of oat bran, plus some flax and wheat germ. Mix wet ingredients together then add grated veggies, fold in dry ingredients. Bake for 15 min or so at 400 degrees.
