Season steak • W Sauce Fireshire Binder • Kosmos Q Prime Steak Rub + Double Pepper Cow Cover 2. Smoke at 250°F • Run pit until internal hits 120°F 3. Rest (short) • 5–10 minutes 4. Hard sear • Cast iron or hot grill • Sear until internal hits 133°F 5. Final rest • 10 minutes 6. Slice + plate over seasoned fries Creamy Garlic Parmesan Peppercorn Sauce Ingredients • 3 tbsp butter • 1 tbsp olive oil • 1 small onion, finely sliced • 8 oz baby bella mushrooms, sliced • 5 cloves garlic, minced • 1 tbsp coarse cracked black pepper • 1.5 cups heavy cream • 1/2 cup beef stock • 1/4 cup bourbon (optional but recommended) • 1 tsp Worcestershire sauce • 1 tsp Dijon mustard • 1 tsp salt • 1 tsp onion powder • 1/2 cup freshly grated Parmesan • Chives (finish) Instructions 1. Butter + oil in pan 2. Sauté onions + mushrooms until browned 3. Add garlic (30–45 seconds) 4. Add cream + beef stock + Worcestershire + Dijon 5. Deglaze with cognac/bourbon (or beef stock) 6. Add black pepper, salt, onion powder 7. Simmer until lightly thickened 8. Turn heat LOW → whisk in Parmesan 9. Pour over top of steak and finish with chives
