Chocolate Cookie Dessert Bowls
My dream dessert! These chocolate cookie bowls are rich, soft in the center, slightly crisp around the edges, and perfect for filling with ice cream and your favorite toppings. Even better - they freeze beautifully for an easy make-ahead dessert.
Ingredients:
- 1 1/4 cups flour
- 1/4 cup cocoa powder + 3 tablespoons
- 1/2 tsp baking soda
- pinch of salt
- 1 egg
- 3 tbsp butter or avocado oil
- 2 tbsp maple syrup or honey
- 1/4 cup brown sugar or coconut sugar
- 1 tsp vanilla
Instructions:
1. Preheat oven to 350°F.
2. In a medium bowl, whisk together the egg, butter or oil, maple syrup or honey, brown sugar, and vanilla until smooth.
3. Add flour, cocoa powder, baking soda, and salt. Mix until a soft dough forms.
4. Divide dough into 12 equal portions and roll into balls.
5. Generously grease the underside of a muffin tin.
6. Place each dough ball onto the back of the muffin tin and gently press into an even circle, making sure the dough reaches close to the edges without becoming too thin.
7. Bake for 8–10 minutes.
8. Allow the cookie bowls to cool for about 10 minutes before carefully removing.
Fill with ice cream and your favorite toppings. Enjoy!
Pro Tip:
For extra stability, drizzle the inside with melted chocolate and let it harden before adding ice cream. These also freeze very well for future desserts.

What I love about this dessert (or morning coffee) is that it’s interactive, customizable, and really fun to serve. Mix and match flavors, ice cream bases, syrups, and toppings to make your perfect combo. And don’t worry, this doesn’t have to be fancy. You can absolutely use espresso, but brewed (or instant) coffee works just as well.
Here are the combinations featured, but feel free to get creative with the flavors. The possibilities are endless!
☕️ Vanilla ice cream + coffee + coffee beans
☕️ Chocolate ice cream + mocha coffee + chocolate bark
☕️ Vanilla ice cream + coffee + mint extract + cookie crumbs + fresh mint
☕️ Caramel swirl ice cream + caramel coffee + caramel cream
☕️ Vanilla ice cream + banana bread syrup + coffee + crème brûlée banana slices

🍌 Banana Bread Syrup 🍌 1 mashed banana 3/4 c brown sugar 1/4 c maple syrup cinnamon salt
Combine all ingredients in a saucepan. Bring to a boil, then reduce to a simmer for about 10 minutes. Strain, cool, and serve.

Ingredients
* 2 cups instant oats (can also be replaced with oat flour or almond flour)
* 1 cup shredded coconut
* 1 cup chopped walnuts
* ½ cup sweet cocoa powder
* 6 to 8 tablespoons dulce de leche (plus a little extra if needed to help bind the mixture)
* Milk, as needed
* Extra shredded coconut, for coating
Instructions
1. In a large bowl, combine the oats, shredded coconut, chopped walnuts, and sweet cocoa powder.
2. Add the dulce de leche and mix well.
3. If the mixture feels too dry, add a bit more dulce de leche or a splash of milk until the texture is moist and easy to shape.
4. Roll into small balls, pressing firmly with your hands.
5. Coat each truffle in extra shredded coconut.
6. Chill for a few minutes before serving, if desired.

Mix together:
• 1/2 cup butter (or vegan margarine for parve)
• 2 cups flour
• 2 cups brown sugar
Once crumbly, set aside 1 cup of the mixture for topping.
To the remaining mixture, add:
• 1/2 tsp salt
• 1/2 tsp cinnamon
• 1 tsp baking powder
• 1 tsp pure vanilla extract
• 1 egg
• 1 cup whole milk (or creamy oat milk for parve)
Pour into a loaf pan sprayed with avocado oil cooking spray.
Top with:
