Muffin Monday series - Raspberry and white chocolate muffins topped with Easter mini eggs. One thing about Easter is all the chocolate goodies. I’ve added mini eggs to my raspberry and white chocolate muffin and these went down an absolute treat. Let’s start prepping! Ingredients: 4 cups SR flour 1 cup sugar 3 eggs 2 cups milk 1 cup oil 1 1/2 cup frozen raspberries 1/2 cup white chocolate buttons Mini eggs 3 for each muffin Method: In one bowl add flour, sugar, raspberries and white chocolate buttons. In another bowl add milk, eggs, oil and whisk. Add wet to dry ingredients and mix using wooden spoon. Oil spray muffin tray, add mixture and place 3 mini eggs on top. Fanbake on 180 for 15 minutes. Part 11 - Quick and easy recipe. Corned beef stew. This kai brings back so many memories of childhood days. Often dished up on our table for me and my siblings and our mum would always make one or two wheels of Māori bread. Dad asked for this and I was happy to oblige. His smile was gold. Let’s start prepping! Ingredients: 1 can Hellabys corned beef 2-3 medium size potatoes 3 medium size carrots 1 medium sized onion For seasoning; salt (to taste) and 2 teaspoons of chicken stock 1 teaspoon of curry powder (optional) 2 heaped teaspoon of cornflour and water (for thickening. Method: In a medium size pot full 3/4 with water and place on stove top. Start preheating. Peel cut and dice potatoes and carrots. Chop onion and add all three ingredients to pot. Boil until almost cooked still firm. Add Hellabys corned beef and stir. Add salt and chicken stock for seasoning (add to taste). Add 1 teaspoon of curry powder (optional) for extra flavour. Remove 1 to 1 1/2 cups of stewed broth. Thicken with cornflour and continue stirring. Just add enough cornflour for nice soupy broth. Give one last stir then plate up. Enjoy! Moroccan seasoned lamb loin chops, garlic flavoured couscous, garden peas with crumbled feta cheese. Deliciously wholesome kai for the whānau tonight. Lamb loins were on special at Woolworths, six in a pack for $15. As I had all the other ingredients already, this was a delicious $15 meal for the whole whānau. How many Michael Jackson songs do you know whānau? This was fun with a couple of lyrics I couldn’t remember haha. For Mother’s Day my kids took me to see Michael. The memories of being a kid growing up during the 1980s came flooding back. Every where you went it was Michael mania. Walking around the school yard singing Beat it, break dancing to Thriller and Wanna be starting something. School discos blasting Beat it and Thriller over and over. Memories still clear in my mind today. This movie left me feeling high on every emotion, and when the scene of Michael finally breaking away from his domineering father played out, it left a feeling of satisfaction. That was the moment Michael Jackson was reborn and finally free to entertain the world with his unique creativity. His fans wrapped him with love and support and during this error, He was untouchable. Muffin Monday series - Apple and walnut mixed spice muffins. Let’s start prepping! Standard mix: Dry Ingredients: 4 cups flour 1 cup sugar Wet ingredients: 2 cups milk 1 cup oil 3 eggs Whisk together and add to dry ingredients Extras: 1 cup diced apple (I used tinned apples) 1/2 cup walnuts 1 teaspoon cinnamon 1 teaspoon mixed spice Add to dry ingredients, add whisked wet ingredients and mix altogether using a wooden spoon. @recipe_tin This recipe is lit! šŸ”„ Chicken, coconut and chickpea curry. Let’s start prepping! Ingredients: 1 packet stir fry chicken (3 for $20 Woolworths range) Generous splash of olive oil 1/2 onion 4 cloves fresh garlic (crushed) Freshly grated ginger 2 Tablespoons curry powder 1 teaspoon turmeric 1 teaspoon 1/4 cup tomato paste 1 1/2 cup chicken stock (Gaults NZ) range @gaultsnz 1 can coconut cream 1 can chickpeas Freshly chopped coriander (finely chopped) Salt for seasoning Method: Add olive oil to pot and let heat. Add onions and cook for 3 minutes or until translucent. Add garlic and ginger and mix together, add spices and mix again then quickly add tomato paste. Stir together for 2-3 minutes then add chicken stock. Simmer until liquid starts to reduce down and continue to stir. Add coconut cream, stir and add salt for seasoning. Add chopped fresh coriander. Note: I forgot to add spices after the garlic and ginger and added after tomato paste. It was still tasty and delicious but as made in original recipe, please add as per method above! 😊 In rice cooker add 1 1/2 - 2 cups of jasmine rice.
