Be warned once you start, you wonโ€™t stop! ๐Ÿง€ ๐Ÿคค ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: 1 pound elbow macaroni 1/2 cup unsalted butter 1/2 cup all-purpose flour 4 cups half and half 2 cups shredded smoked gouda cheese 2 cups shredded cheddar cheese 1 teaspoon salt 1/2 teaspoon black pepper 1 teaspoon all purpose 1/2 teaspoon paprika 1/2 cup breadcrumbs (optional, for topping) ย  ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: Preheat your oven to 350ยฐF (175ยฐC) and grease a 9x13 inch baking dish. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside. In a large pot, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes, stirring constantly, to make a roux. Gradually whisk in the milk, making sure there are no lumps. Cook, stirring constantly, until the mixture thickens, about 5-7 minutes. Add the shredded smoked gouda and cheddar cheeses to the sauce, reserving some for topping if desired. Stir until the cheeses are melted and the sauce is smooth. Season the cheese sauce with salt, black pepper, all purpose and paprika. Taste and adjust seasoning as needed. Add the cooked macaroni to the cheese sauce and stir until well coated. Pour the mac and cheese into the prepared baking dish. Feel the island vibes with these scrumptious coconut drop! ๐Ÿฅฅ๐ŸŒดDonโ€™t judge me for using parchment paper. Couldnโ€™t find any banana leaf to save my life. Dem still taste good ๐Ÿ˜‚๐Ÿ˜‚ ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: 2 cups diced coconut 2 cup brown sugar 4 cup water 1/4 teaspoon salt 1 tbsp molasses ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: In a saucepan, bring the water to a boil over medium heat then add coconut to the saucepan and cook for 45mins. Add the sugar, ginger, molasses and continue boiling for about 40mins or until the mixture thickens. Drop serving spoon full on a parchment/wax paper or green banana leaf and let them cool until drops are fully set. Starting my Sunday with a burst of Jamaican flavors โ€“ corned beef and cabbage, a nostalgic comfort classic. ๐Ÿ‡ฏ๐Ÿ‡ฒ ๐—œ๐—ป๐—ด๐—ฟ๐—ฒ๐—ฑ๐—ถ๐—ฒ๐—ป๐˜๐˜€: 1 can of corned beef 1/2 head of cabbage, julienne 1 onion, diced 2 cloves of garlic, minced 1 bell pepper, diced 1 tomato, diced 2 tbsp vegetable oil 1 tsp thyme 2 tbsp ketchup 1 tsp black pepper Salt to taste ๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€: - Heat vegetable oil in a large skillet or pot over medium heat. - Add diced onions, minced garlic, and diced bell pepper to the skillet. Sautรฉ until onions are translucent, about 3-5 mins - Add chopped cabbage to the skillet and steam for 3 mins - Add the can of corned beef to the skillet. Itโ€™s Jamaican Toto - Coconut Cake INGREDIENTS 3 cups grated coconut 2.5 cups coconut milk 1 1/2 cups brown sugar 1 tsp cinnamon powder 1sp baking soda 1 tsp nutmeg powder 3 cups all purpose flour 1/2 tsp allspice mix spice 1 1/2 tsp ground ginger 1 tsp salt 2 large eggs 1 tbsp vanilla extract 1 tbsp Appleton rum 1/2 cup unsalted butter, melted Add dry ingredients (cinnamon, flour, allspice, nutmeg, salt, baking soda & powder, ground ginger) to a medium-sized mixing bowl Add eggs, sugar, butter, vanilla extract and coconut milk and rum to a medium-sized mixing bowl Combine wet and dry ingredients in one mixing bowl then add grated coconut to mixture Preheat your oven and grease your baking pan with butter or olive oil Add mixture to greased baking pan and bake for 45 mins until golden brown. Check readiness by sticking the middle with a skewer or toothpick.
