1/2 teaspoon paprika
1/2 cup breadcrumbs (optional, for topping)

Preheat your oven to 350ยฐF (175ยฐC) and grease a 9x13 inch baking dish.

1 can of corned beef
1/2 head of cabbage, julienne
1 onion, diced
2 cloves of garlic, minced
1 bell pepper, diced
1 tomato, diced
2 tbsp vegetable oil
1 tsp thyme
2 tbsp ketchup
1 tsp black pepper
Salt to taste

- Heat vegetable oil in a large skillet or pot over medium heat.
- Add diced onions, minced garlic, and diced bell pepper to the skillet. Sautรฉ until onions are translucent, about 3-5 mins
- Add chopped cabbage to the skillet and steam for 3 mins
- Add the can of corned beef to the skillet. Break it up with a spoon and stir it into the vegetables.
- Add diced tomatoes and thyme to the skillet and cook for another 2 mins.
- Add black pepper, ketchup and stir well to combine.
- Cover the skillet or pot and let the mixture simmer for about 10 mins, or until the cabbage is tender, stirring occasionally.
- Taste and adjust seasoning with salt if needed.
- Once the cabbage is tender and the flavors have melded together, remove the skillet from heat.
- Serve corned beef and cabbage hot, with your side of choice.

INGREDIENTS
3 cups grated coconut
2.5 cups coconut milk
1 1/2 cups brown sugar
1 tsp cinnamon powder
1sp baking soda
1 tsp nutmeg powder
3 cups all purpose flour
1/2 tsp allspice mix spice
1 1/2 tsp ground ginger
1 tsp salt
2 large eggs
1 tbsp vanilla extract
1 tbsp Appleton rum
1/2 cup unsalted butter, melted
Add dry ingredients (cinnamon, flour, allspice, nutmeg, salt, baking soda & powder, ground ginger) to a medium-sized mixing bowl
Add eggs, sugar, butter, vanilla extract and coconut milk and rum to a medium-sized mixing bowl
Combine wet and dry ingredients in one mixing bowl then add grated coconut to mixture
Preheat your oven and grease your baking pan with butter or olive oil
Add mixture to greased baking pan and bake for 45 mins until golden brown. Check readiness by sticking the middle with a skewer or toothpick.
Remove from oven, cool and enjoy!!
