Edna Lewis was born on this day in 1916, so for a birthday treat, we’re sharing her Chocolate Iced Layer Cake recipe, as seen in her classic cookbook, IN PURSUIT OF FLAVOR 💛 Save this recipe now, thank us later 😉✨ Chocolate Iced Layer Cake “I think of this cake as a Sunday cake because, for some reason, it is common throughout the South to serve a yellow layer cake iced with chocolate to company. It is a simple cake to make, but as with all cakes, be careful not to overbake it or it will be tough and dry. Everyone loves this cake, especially children, who just seem to adore anything made with chocolate. The icing is very chocolaty and quick to prepare. I guessed at it the first time and now find that it is the easiest kind of icing to make come out smooth. And it tastes so good.” MAKES ONE 9-INCH LAYER CAKE LAYER CAKE ¾ cup (1½ sticks) butter, at room temperature 1½ cups superfine sugar 3 whole eggs 3 cups unbleached all-purpose flour, sifted 1 teaspoon salt 2 tablespoons single-acting baking powder 1 cup milk, at room temperature 1 tablespoon vanilla CHOCOLATE ICING 1 cup granulated sugar 1 tablespoon butter 3 ounces (3 squares) unsweetened chocolate 1 cup heavy cream (not ultra-pasteurized), warmed Pinch salt 2 teaspoons vanilla (Swipe for full instructions) . . #EdnaLewis #ABorzoiBook #KnopfCooks

When the design team at Knopf Cooks set out to give THE TASTE OF COUNTRY COOKING by Edna Lewis a fresh look in celebration of the 50th anniversary of the cookbook, they wanted to keep the design familiar but revisit some type and design elements. Inspired by Miss Lewis’s own words, and the colors of the season, each chapter now has a signature color – Pale Pink for Spring, Tomato Red for Summer, Plum for Fall, and Valencia Orange for Winter. 🌸☀️🍂❄️➡️ Swipe for a look behind the scenes of this design process.
