The Juiciest "Wafu" Chicken & Tofu Patties 🌿✨
Tired of dry chicken burgers? The secret to the most tender, moist, and flavor-packed patties is a Japanese-inspired addition: Soft Silken Tofu.
Using a food processor makes the prep a breeze, and the exterior gets a satisfying "tiny crunch" thanks to a specific flour blend!
Ingredients:
1 kg Chicken breast (freshly ground)
1 pack (250g) Soft silken tofu
1 cup Dried wood ear mushrooms (rehydrated & pulsed)
½ cup Carrots (pulsed)
¼ cup Red onions (pulsed)
¼ cup Fresh chives (chopped)
1 tbsp Lee Kum Kee Minced Ginger 🫚
1 tbsp Home-minced garlic (soaked in olive oil) 🧄
1 Large egg
Binding/Crust: ½ cup Cornstarch + ½ cup Sweet potato powder
Seasoning: Salt & black pepper to taste
Instructions:
Prep the Base: Use a meat grinder for the chicken breast to ensure the best texture.
Pulse & Blend: Toss your rehydrated mushrooms, carrots, and onions into a food processor. Pulse until finely minced for easy blending.
Mix: Combine the chicken and pulsed veggies with the Lee Kum Kee ginger and your garlic-infused oil. The olive oil from the garlic helps carry the flavor through the whole patty!
The Secret Coating: Fold in your 50-50 mix of cornstarch and sweet potato powder. This combo is the key to that delicate outer crunch.
Fry & Serve: Pan-fry until golden.
Perfect on a bed of greens or in a bun!
Pro-Tip: Using garlic pre-soaked in olive oil is such a time-saver—plus, that flavored oil adds an extra layer of moisture to the lean chicken breast.

It's basically a seafood party of salmon, shrimp, and kani with an egg swirl and enough nori to make it look like a forest. 🌲
Safe to say, I didn't regret cheating on my go-to order. 🌊

☀️ 7 AM and Baguio is already 20°C. Time for a high-stakes iced coffee intervention. 🧊
For the last decade, my body has had a strictly enforced, completely unexplainable rule: no regular brewed coffee allowed.
I can handle low-caffeine or decaf just fine, but real brewed coffee triggers immediate chaos. This, coming from someone who would drink a cuppa right before bedtime.
If I cross that line, it instantly sets off heart palpitations. At worst, it upgrades to full-on presyncope—which is just a fancy medical term for that lovely, lightheaded, dizzy sensation where your body says, "Hey, we are about to faint right now!" 🫠
Why does regular brewing do this to me while milder options don't? Absolute medical mystery. But pouring this Dunkin' iced coffee, after starting the day with a 7 to 1 pm citywide power interruption, felt worth the gamble today.

Saturday was Errand Day.
Started early to bring the youngest for x-rays for his upcoming routine visit to his cardio.
Kids were scheduled for a visit to their respective barbers, followed by a supermarket run.
That being said, a lovely, relaxing lunch was on our to do list.
Went to @hokabrew , a fam favorite.
Juju had his truffle parmesan fries, Max got his Kiniing Ribs platter, and Phil ended up with a Chili burger ( more on those meals later). New York and Blue Berry Cheesecakes soon after too.
I, on the other hand, enjoyed 2 bowls of their Mongolian Buffet.
My fave mix? Loads of watercress, chayote, tomatoes, tofu, bean sprouts, and bokchoy. Followed by aromatics - onions and garlic, a generous portion of chicken, pork, beef amd chicken liver and a mixture of the following sauces: hoisin sauce, oyster sauce, fish sauce, chili garlic sauce and sesame oil.
Zero rice and noodles. Just loads of protein, veggies and flavor 🤗

They say I was born to be a mom, and Mother’s Day 2026 was the ultimate proof. Why? Because only a mother could navigate a dinner menu where everyone is on a different dietary planet! 🪐👩🍳
Since I’m babying my hand to make sure I can lug suitcases across Chongqing and Zhangjiajie in two weeks, the kitchen was officially CLOSED.
Instead, it was a "curated logistics" feast—a hodge-podge of small servings to fit a very complicated guest list:
💉 Me on Mounjaro & Phil on Ozempic (Teeny-tiny portions of that Surf & Turf platter: crab, mussels, shrimp, tuna panga, grilled chicken, grilled tuna belly and liempo!)
😬 Son no.2 with freshly tightened braces (Soft Pancit Bihon and Palabok for the win!)
🦵 Son no. 3 on a strict mission (Watching the weight to keep the pressure off his congenital patella dislocation—protein-focused bites only!)
🍕 Max & Juju (Navigating their sensory favorites with Pizza, Mojo potatoes, and Fried Chicken.)
🏥 The Eldest (Sent a hospital care package so he didn't miss out while on intern duty! Gotta keep those braincells fed before the med licensure board exams this October!)
We started with Cafe Mary Grace cassava chips and onion dip, and ended with a Dunkin’ sugar rush. 🍩
It wasn't home-cooked, but it was a perfectly "us" puzzle.
My hand is rested, the luggage is calling, and my heart is full.
I might not have cooked, but coordinating this "dietary circus" is a full-time job I wouldn't trade for anything! ❤️✨
