Recipe
1. Blend lemon, garlic (5g), salt (4g), and 1 egg.
2. Slowly add cold oil (250ml) while blending for Alioli.
3. Boil 600ml water with 10ml chicken stock.
4. Clean shrimp and dice squid into rice-sized bits.
5. Chop tomatoes, 1/2 onion, and 5 garlic cloves.
6. Steam clams in broth until open; set aside.
7. Sear shrimp in olive oil, then remove.
8. Sautรฉ onion & garlic with pimentรณn, turmeric, and tomatoes.
9. Reduce moisture, add 200g rice, and toast.
10. Mix in the diced squid.
11. Add broth (600ml) in three parts while simmering.
12. Shake the pan to cook; do not stir.
13. Rest for 10 mins (covered). Plate with shrimp & clams.
14. High heat for a crispy crust (socarrat). Done!

Ingredients:
Paprika, Eggplant, Zucchini, Tomato, Onion, Garlic.
Extra Virgin Olive Oil, Red Wine, Salt, and a crusty Baguette.
The Process:
1. Roast & Peel: Char the paprika and blanch tomatoes for that perfect skin-off texture.
2. Precision: Slice eggplant, zucchini, and tomato into 0.5cm rounds. Salt them to draw out the moisture.
3. The Sauce: Sautรฉ onion & garlic until golden. Add tomatoes, red wine, and roasted paprika. Blend and strain through a sieve for a velvet finish.
4. Assemble: Layer the vegetables over the sauce. A final touch of olive oil and salt.
5. The Bake: 25 mins at 180ยฐC.
