Some people don’t like eating raw fish, and this meat is also excellent on the barbecue, baked, or sautéed in a pan. It really is one of the best fish to catch and cook.
For those who might complain about all the meat that wasn’t in the prime cuts, don’t worry it will be used. You can boil, steam or bake the entire fish, pulling all the meat off to use for soups, dumplings and other creative culinary dishes.

All jokes aside, African Pompano are beautiful to see in the water, they fight hard, their meat tastes incredible. The soft white meat can be eaten raw or cooked and both are amazing.
