M R & M R S 🤍 Lovely to be back at @fanhams_hall last week for L & J Such a beautiful venue and a lovely couple to work with! They chose a ganache coveted cake with stencil detail and a brushed silver hoop in the centre. 👋 Hello from us! Every now and again we like to reintroduce ourselves for anyone joining our crazy cake adventure! And as I’ve finally got a photo of us without hairnets and pink hairbands (ok… that’s just me 😉), today felt like the perfect day! We’re David 🇵🇹 & Kelly 🇬🇧 — a husband & wife team from Royston, Herts, with two lovely kids who, when not punching each other over seeing a Mini Cooper or yellow car (why do kids do that?!), are growing up in a family business, like I did, built on honesty, hard graft & a hefty passion for what we do 🥰 We met at school, worked together at Mica Hardware, and have been together since 18. David joined shortly after we opened the shop to help out… now he’s a core part of Kelly’s Kitchen (he should really have his name above the door too 🥹). Alongside our shop, we run a commercial bakery in Bassingbourn where our small team of 4 bakes everything from scratch. 🗓 Menu goes live Thursdays 8pm 🧁 Shop open Fri–Sun 📦 Postal service live Tuesdays 6pm We also specialise in wedding & celebration cakes - I hand decorate every single one, and it’s my favourite part of the job 💕 The future plans for us? Working together and still getting along would be #1 🤣 no but seriously, we love our dedicated team, AMAZING customers and our home town. So we are just striving to bring consistent flavourful bakes, the best customer experience and provide a workplace for our team where they feel valued, supported and enjoy what they do 🥰 With footfall across the country being down for retail it’s a scary time to have a shop. That’s why we thank you guys SO much for continuing to support us every week for your weekend treats, it really does mean more than we could ever explain 🥰 Thank you so much ❤️ Kelly & David

My first thought was pleeeease don’t let it be my cupcakes again…. 🫣😩 This actually happened on Friday morning, but thankfully we still had plenty of each flavour for the counter 😅- that didn’t go on the floor! And today we have allllll the cookies in 🩷 Plus Cinnamon Rolls and LOTs of our Pasteis de Nata (Portuguese Custard Tarts). If you haven’t tried these yet, they are our hand made flaky pastry that’s crunchy. With our hand made custard filling that’s baked inside and a high heat to make a caramelised top for extra flavour. Traditionally, in Lisbon these are served with a dusting of cinnamon so please do ask us if you’d like us to sprinkle yours with some! Sorry we didn’t get chance to make our Pizza Rolls this week as the bakery was too cold again and they take a lot longer to prove as they have less sugar. But hopefully they will be back next week! But we do have plenty of cinnamon rolls- all of them are completely hand made so they are not all uniform, some slightly bigger than others, but we do try and cut them so they are similar sizes. If you have a preference for which one you’d like from the tray always ask us though 🩷 Open 10-2 today, Royston only. Serving @hotnumberscoffee as always

Who knew these little receipts would turn David into full Gordon Ramsey mode 😂🙈 (outtake at the end 😉) He hates it even more when I’m there and I write the order down with an actual PEN then all hell breaks loose 😆 Anyway, the bread is fresh out of the oven this morning and ready for you all! What is special about our bread? Our hand made Bolo de Caco Portuguese flat bread. A much loved family recipe by Fatima, David’s dearly missed Mum. Who has one of our fillings named after her too 🥰 We have many memories of her making her breads and stuffing them full with so many different fillings (as well as the traditional garlic butter too which is delicious) Since our launch on David’s birthday back in February, we have been absolutely blown away with your support. So many of you are regulars now and we are starting to know your order! With lots of new faces coming in to try them too 🥰. We’re making more and more every week and despite David’s occasional tantrums he is in his element making them for you all 🥹 We also have an internal competition in the family to see whose filling is the most popular 😂- at the moment my Mum is in the lead. The Sue is her famous Coronation Chicken which she always makes at Christmas. It’s definitely my go to, after my own of course, The Kelly - with extra olives for me 😋 We have the choice of 6 fillings, and sauces. Plus our monthly special, which is The Patti this month (our take on the Plowman’s, apple slices, gherkins, ham, cheese, Piccalilli and salad) You don’t need to pre order, we can make them while you wait, just pop in. 🙊 Not even sure at what point we decided that over 40 different items per week was going to be our normal standard to be honest 😂 But here we are. Over 7 years since I thought ‘I know, why don’t I give it a go’ Started with celebration cakes, then went onto wedding cakes, then different flavour cupcakes, before years of tweaking our Belgian Chocolate brownie recipe - which is the same one we use today. Still learning every day, improving techniques, making mistakes, having a laugh whilst also momentarily losing our minds. Wouldn’t have it any other way 🥰 If you’re looking for a weekend treat for getting through a long week, our doors are back open this morning. Coffee is is ready to be freshly ground and the cookies, Pasteis de Nata, cinnamon rolls and breads are just coming out of the oven. Sandwiches available from 11.30am in Royston too. I have a love hate relationship with tripods 😂🙈 The menu is here and that must mean the week is nearly done and the weekend is fast approaching 🙌🏻 We have the Toffee Apple Crumble Cookie Pie with Belgian white chocolate ganache, apple pieces, apple compote, crumble and hand made caramel. Plus we have the Biscuit Brownlie- a Brownie and Blondie with Custard Creams and Bourbon Biscuits. We have a new Dubai Indulgent Drink this week which comes with a little piece of our Dubai Brownie. Plus Carrot Cake Pots, Unicorn cupcakes - and some sugar biscuits perfect if your not so little one has finished their SATs this week 🥰 David’s Deli @ Kelly’s Kitchen is back this week serving sandwiches Friday AND Saturday from 11.30 - our 6 flavours plus this month’s special The Patti- our take on the Plowmans. All served on David’s hand made Bolo de Caco breads which are baked early morning before we open. Passing on some tips and tricks for all those who make cakes at home or are just starting out on the journey 🩷 1. Bubbles in buttercream - take a tiny bit of the buttercream microwave until melted and add back into buttercream and mix to knock out air bubbles 2. Never rush the process or skip a step- crumb coating and chilling is essential to avoid cakes leaning, or filling spilling out 3. A good smoother will change your life - I use the acrylic ones from @lissieloulondon and of course your technique 4. Baking low and slow means you get a flat top, soft crumb and avoid dry edges with under baked middles 5. Dowels and support boards are essential with tiered cakes, without them the cake underneath could collapse- even if it looks ok when you leave it, gravity will eventually do its thing 6. Gypsophila and eucalyptus? Nope. Checking whether flowers are safe to go on cakes before adding them is really important (and wrapping stems correctly) if in doubt use silk! 7. First time I told my Dad I was making an Arsenal cake 😂🙈😬 8. I take my spirit level everywhere, a wonky table or cake stand = a wonky looking cake 9. When writing on cakes don’t go slow as tempting as it is, it will make your hand wobble 10. Learnt the hard way 🙊 11. Knowing about food hygiene can basically ruin any outing involving food very quickly 👀 12. Leaving plenty of time is essential when delivering wedding cakes. You may think that a breakdown on the motorway won’t happen to you, but I’m here to tell you it very much can 😩 I could go on, so many cakes over the years and so many things learnt and skills developed. We still learn daily and there’s always a new cake trend to get practising with too. If only any one of us had the time 😂🙈 🧀 🍷 🍫 The end of a long and amazing day at @barkwaymarket …. we chilled for a moment with the teddy bear and enjoyed a quick cheeky glass while we tried to find the energy to get back up to pack up the vans 😂😮‍💨 No seriously though, wine, cheese and indulgent treats, what an evening that would be, where are our fellow foodies at 🙋🏻‍♀️😍

So sorry guys, we hate letting you down 🩷 The Cinnamon Rolls were in this morning albeit an hour late! We are trying our best to keep up at the moment and when curve balls are thrown in sometimes it derails things more than usual when you’re already putting all the hours in that you possibly can 🥺 The Cinnamon Rolls flew off the shelf when they arrived but we do have our new Pizza Rolls to try and also Natas and lots of bakes 🥰 and @hotnumberscoffee of course. After a quick rest we’ll be back to it for next week refreshed and ready to bring you your treats nice and fresh on Friday ❤️ Have a lovely Sunday all!

Side note: after I made this reel there were a further few more 😬😆🙈 We are OPEN today for your weekend treats in Royston! 9-2 & Bassingbourn 9-12. We are also at Barkway Market in the main field with our stall open 10-4. We’ll also be having Cinnamon Roll Sunday tomorrow!
