Wax Comb, our 7.0% IPA, is fresh in cans at the brewery this weekend. Brewed with Citra and Chinook in the whirlpool, then dry-hopped with Galaxy, Chinook, Citra, and Amarillo, this batch leans into a vibrant, layered hop character. Expect notes of ripe peach, passionfruit, and mango, balanced by orange citrus and a touch of piney resin. It pours a dense golden-orange and finishes with a firm, clean bitterness that keeps each sip crisp and refreshing. Fresh Wax Comb cans are available today at the brewery, with distribution heading out across New Jersey next week. Follow @kanedistributing for more info. Selecting barrels for our barrel-aged blends is about finding the right balance of age, character, and depth of flavor. As a part of our barrel-aging program, we always consider how a beer can evolve with the addition of a few complementary ingredients. Today we racked a blend of Woodford Reserve Double Oaked and Elijah Craig 8-Year Bourbon barrels into stainless tanks. Next, we’re adding a couple of ingredients to the​ blend for the first barrel-aged version of a stout we haven’t released in a few years. While we wait for this beer to mature, keep an eye out for upcoming bottle releases coming soon.

We brew beer five days a week and package beer a few times every week. A key principle here at the brewery is quality and freshness. Our process is built around making sure you are enjoying the freshest beer. Kegging is one of the final steps before our beer makes its way to distribution. Our team carefully packages each beer to preserve the character, aroma, and flavor that we’ve worked hard to build from brew day through conditioning. Our kegs are stored cold and delivered cold before they go out all over New Jersey. It’s important that our beers are poured fresh on draft in bars, restaurants, and taprooms statewide. In addition to these kegs, our year-round beers are available to take home from the brewery in sixtels, so you can enjoy at any gathering, big or small. Cheers to fresh beer.

Today we are pulling out three @fieldandoak bottles from the cellar that we think are the perfect beers to enjoy as we enter the summer season. TWO, our first blend to incorporate multiple years of our spontaneous program, is comprised of three different barrels from the 2018 and 2019 spontaneous seasons. TWO carries aromas of apricot, peach and grapefruit along with Brettanomyces derived cellar character and a citrus flavor from our aged hops. It presents a depth in acid profile balanced by cream and caramel flavors from our all–New Jersey grains and brewing process. Next, Blackberry | 2020 Harvest was created from a blend of barrels containing one and two year traditionally crafted spontaneous beer with a low acidic profile that complements the qualities of the hand-picked New Jersey blackberries we conditioned this beer on. Blackberry | 2020 Harvest pours a deep purple with burnt orange highlights and a purple-white foam. Aromatics of fresh baked blackberry crumble and berry preserves with notes of vanilla and citrus are all reminiscent of these late summer berries. Cherry | 2020 Harvest is made from a blend of two traditionally brewed spontaneous beers; a 16-month-old spontaneous beer using an elevated hopping rate and a 7-month-old spontaneous beer brewed with New Jersey blueberry blossom honey. We added a large amount of New Jersey grown and harvested Montmorency cherries to this blend to integrate all aspects of the cherry, from the juice, skin, and pits. Cherry | 2020 Harvest pours a beautiful blush red with big cherry pie and almond aromatics. There is a light funk, and balanced acidity to this beer that complements the jammy stonefruit, and deep cherry flavors. These spontaneous beers are a perfect way to enjoy the vibrant season ahead, so stop in for bottle pours and bring them home to share. For more details on these bottles, visit @fieldandoak . Cheers.

Spring Daydream, our newest small batch draft-only 6.8% Maibock, is on tap at the brewery today. This pale German-style lager is brewed with Pilsner, Barke Vienna and Munich malts for a rich, refined malt profile. This beer was lightly hopped with Hersbrucker to add a gentle floral character that complements its notes of fresh bread, light toast, and a soft honey sweetness. Full-bodied and smooth, Spring Daydream is an excellent draft choice for the season. Stop in this weekend for a fresh pour of Spring Daydream. We’re open from 12pm–8pm.​

Tableside, our new 6.2% IPA, is available in cans at the brewery starting today. Tableside was brewed with our house Pilsner and a touch of wheat, creating a clean foundation for the some of our favorite hops. Tableside is hopped with Anchovy from @segalhopranch and Simcoe for a firm bitterness and layered, expressive hop aromatics. Expect a straw colored pour with flavors of ripe citrus, peach, and pine alongside subtle notes of watermelon and tropical fruit from the Anchovy hops. Tableside was fermented with a neutral yeast strain to create a crisp, dry finish that keeps the hop character bright and refreshing. We picked up fresh New Jersey blueberry blossom honey for a new blend of Apiary we’re brewing this week for our Spontaneous and Saison beer project, @fieldandoak . Apiary is our take on a Belgian-style honey beer. Inspired by traditional Belgian brewing techniques, Apiary is brewed with local blueberry blossom honey from @harveys_honey , then fermented in oak with Saison yeast and native microflora. Apiary pushes a refreshing floral aroma followed by notes of lemon, subtle honey, a pleasant hoppy bitterness, and lightly developing acidity. Keep an eye out for Field & Oak beers releasing soon and a new Apiary blend in the future. Cheers.

Oxygen is the fastest way for beer to lose its brightness and aroma. To keep our beer fresh for as long as possible, we keep oxygen levels as close to zero as possible. During every canning run, we measure Total Package Oxygen (TPO), which captures the oxygen dissolved in the beer and any oxygen picked up during packaging in the can’s headspace. To get an accurate reading, we fully agitate the can before testing, forcing all the oxygen into solution so we are measuring the true total. Tracking TPO gives us a good picture of how well our packaging process is performing and ensures consistency from batch to batch. Low TPO means the fresh beer you drink at home, at the bar, or here at the brewery, tastes exactly the way we intended.

Today we’re releasing Small Batch Single Hop Mosaic IPA, available on draft at the brewery. Our Small Batch Single Hop series continues, highlighting a rotating selection of individual hops that were hand-selected during our annual trip to the hop farms in the Pacific Northwest. This 6.6% single-hop IPA is brewed exclusively with Mosaic, a favorite hop used in our year-round beer, Party Wave, and other releases throughout the year. Known for its expressive fruit character, Mosaic brings a layered profile that we’re excited to showcase on its own. Small Batch Single Hop Mosaic IPA was hopped in the Whirlpool and the dry-hop with nothing but Mosaic from @jacksonhopfarms in Idaho. It pours a golden orange and delivers vibrant notes of mixed berries, tangerines, and dank fruit punch. Stop in and try our Small Batch Single Hop Mosaic IPA today. Summer Share, our 6.8% Cold IPA, is back. This summer’s release is brewed with our traditional pilsner, rice, and is hopped on the hot side with a blend of Waimea and Motueka. We then dry-hopped Summer Share with Citra, Waimea, and Motueka for a more intense tropical profile. Fermented with our house lager yeast, Summer Share drinks crisp and clean. It pushes flavors of ripe citrus, light tropical fruit, and a touch of melon, all wrapped in a pale golden pour and a refreshing finish. Cans are available at the brewery today.
