Recipe for the Poivre sauce:
- Half a medium shallot
- Two garlic cloves
- 2 tsp black pepper
- 1/4 cup cognac or brandy
- 1 cup beef stock
- 1/3 cup heavy cream
- A few dashes of Worcestershire sauce
- 1-2 tbsp cold butter
- 1 tbsp parsley
Instructions:
1. Sauté shallots, garlic, and freshly cracked black pepper in some of the remaining butter and oil in the pan until soft and fragrant.
2. Deglaze with the cognac or brandy and flambé.
3. Add the beef stock and reduce until it starts to thicken.
4. Add the heavy cream and the Worcestershire sauce.
5. Add salt to taste and simmer briefly.
6. Turn off the heat and whisk in the cold butter and optionally finish with finely chopped parsley.

Ingredients:
Ciabatta bread (or bread of choice)
Havarti cheese
flank steak, salt & pepper
Oil, butter, garlic, herbs
2 onions
Butter, Worcestershire, balsamic, salt, black pepper
Bacon
Asparagus
Parmesan reggiano
Parsley
Sauce:
4 tbsp Mayo
2 tbsp Grainy Dijon
2 tsp Worcestershire
1 tbsp Hot sauce
Garlic powder, salt & pepper
Method
- Mix sauce and set aside.
- Sweat onions in butter on low. Halfway through add Worcestershire, balsamic, salt, and pepper. Cook low and slow, deglazing with water, until deeply caramelized.
- Wrap 2 asparagus with 1 slice of bacon. Bake until bacon is crisp and asparagus is tender.
- Season steak, sear hard in neutral oil. Add butter, garlic, and herbs, baste, rest, and slice thin.
- Toast ciabatta with Havarti inside until melted.
- Sauce the bread, add steak, onions, parsley, bacon-wrapped asparagus, a light mound of Parmesan, black pepper, and more sauce.

Ingredients:
8-10 tomatoes
1 large onion
2 bell peppers
3 bulbs of garlic
Oil
Salt
Black pepper
1 cup chicken stock (or stock of choice)
Fresh basil
1/2 cup heavy cream
4 cans of tuna
1/2 medium shallot, finely diced
2 tbsp finely diced banana peppers
2 celery sticks, finely diced
1 tbsp chopped dill
1 tbsp chopped parsley
2-3 small pickles, finely diced
1/3 cup mayo
1 tbsp Dijon mustard
1-2 tbsp hot sauce
2 tsp lemon juice
Sourdough bread
Butter
Cheeses (I used: smoked cheddar, Havarti, and Parmesan)
Instructions:
1. Chop the tomatoes, onion, and bell peppers, then add them to a baking tray with the garlic bulbs (with the tops cut off). Coat everything in oil and season generously with salt.
2. Bake at 375°F for 20-30 minutes, until softened and developing some nice char.
3. Squeeze the roasted garlic out of the bulbs, then add everything to a pot with the stock, basil, and black pepper. Blend until smooth, then stir in the heavy cream. Taste and adjust seasoning. If it’s too acidic, add a small pinch of sugar.
4. Add the tuna, shallot, banana peppers, celery, dill, parsley, pickles, mayo, Dijon, hot sauce, lemon juice, salt, and pepper to a bowl and mix until combined.
5. Build the sandwich by layering smoked cheddar, the tuna mixture, grated Havarti, and Parmesan between slices of sourdough.
6. Add butter to a pan over medium-low heat, then place the sandwich into the pan. Cook low and slow with a lid on so the cheese fully melts and the sandwich heats through before the bread gets too dark. Flip and toast the other side until golden and crispy.
7. Serve with the tomato soup and some potato chips if you want the full comfort food experience.

Korean Fried Chicken (3-4 servings)
Chicken & Marinade:
~7 skin-on chicken thighs
Buttermilk (enough to fully submerge)
Hot sauce (to taste)
2 tsp salt
2 tsp garlic powder
2 tsp smoked paprika
1 tsp black pepper
Dredge:
2 ½ cups all-purpose flour
1 ½ cups cornstarch
1 tbsp salt
Glaze:
6 tbsp gochujang
4 tbsp ketchup
3 tbsp honey
2 tbsp soy sauce
2 tbsp rice vinegar
2 tsp sesame oil
5 cloves garlic, minced
1 tbsp grated ginger
Splash of water
3 tbsp cold butter
Herbed Buttermilk Sauce:
1/3 cup buttermilk
1/4 cup mayo
Squeeze of lemon juice
Zest of 1/2 lemon
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp sesame oil
2 tsp chopped dill
2 tsp chopped chives
1/2 tsp garlic powder
1 tsp grated ginger
Instructions
1. Add chicken to a bowl. Pour over buttermilk until fully submerged, then mix in hot sauce and seasonings. Let sit while prepping everything else (longer if possible).
2. Whisk together all dipping sauce ingredients and refrigerate.
3. Combine flour, cornstarch, and salt. Drizzle in a bit of the marinade and mix to create small clumps.
4. Dredge chicken, working it around in the flour mixture and coating well to build a craggy crust. Fully cover all surfaces.
5. Heat oil to 325°F (163°C). Fry in batches for 6–8 minutes until lightly golden and cooked through. Remove and rest.
6. Simmer glaze ingredients (except butter) for a couple minutes. Turn off heat and whisk in cold butter until glossy.
7. Raise oil to 350–375°F (175–190°C). Fry chicken again for 30–60 seconds to crisp.
8. Cover the chicken with the glaze, top with sesame seeds and scallions, and serve hot with the sauce.

4 bone-in beef short ribs

Quesadilla-style Crispy Beef Tacos

Ingredients (3-4 servings)
Beef filling:
1 lb ground beef
½ onion, finely diced
2 tsp paprika
2 tsp cumin
1 tsp black pepper
1 tbsp garlic powder
2 tsp salt
2 tbsp tomato paste
½ cup beef stock
A few dashes Worcestershire sauce
Handful of chopped cilantro
Assembly:
4-8 medium-small flour tortillas (depending on how many servings)
Mozzarella cheese, shredded
Oil for cooking
Chipotle lime crema:
1 cup sour cream
¼ cup mayonnaise
2 chipotle peppers in adobo sauce
Juice of 1/2 a lime
2 tsp honey
A bunch of fresh cilantro
1/2 tsp salt
1 tsp Cumin
1 tsp garlic powder
Instructions:
1. Cook the ground beef in a pan over medium heat. Once the beef has a crust on one side, add the finely diced onion. Cook until the beef is browned.
2. Add the paprika, cumin, black pepper, garlic powder, and salt. Mix well.
3. Stir in the tomato paste and cook it for 1-2 minutes until it darkens slightly and caramelizes.
4. Add the beef stock and Worcestershire sauce, then let it simmer until the mixture thickens and comes together. Adjust seasonings if needed.
5. Remove from heat and mix in the chopped cilantro.
6. Place a layer of mozzarella on a flour tortilla, add a good amount of the beef mixture, then top with a bit more mozzarella and fold it closed.
7. Heat a pan over medium to low heat with some oil and cook the tacos until golden brown and crispy on both sides and the cheese is fully melted.
8. Remove from the pan and serve with Chipotle lime crema.
