After concluding our egg cookery session, our instructor surprised us with a challenge:
Create a restaurant-ready breakfast dish complete with menu concept, costing, and presentation.
• Develop a menu concept
• Cook and plate the dish professionally
• Design a signature drink
• Calculate food cost and final selling price
After several rounds of replating (because perfection matters in culinary school 😅), we finally presented the menu for our imaginary bistro :
Sunny-side-up eggs, sausage hash, and our signature drink, the Spiced Hibiscus Sparkler.
And honestly? The drink was a HIT.
Think zobo… but giving wine-bar brunch vibes.
This exercise reminded me that cooking professionally isn’t just about taste — it’s concept, costing, presentation, and storytelling.
Culinary school is stretching me in the best ways.
