清甜Ikan Bilis 汤 ♨️ 瓦煲伊面 🍲 Claypot Yee Mee 😋 Quick and easy soup recipe! ~Ikan Bilis ~Garlic ~ Water ~Salt to taste With some oil, fry Ikan Bilis & Garlic until golden brown (don’t over fry otherwise it will turn bitter). Add water, and simmer until soup turns “white”, season to taste - and you’re ready to make the best yee mee soup of your lifeee!!!!

Qing & I brought our passion project to life- Soup Stand! 🍲🫶🏻 Our intention is simple: to serve good, fresh & comforting meals suitable for everyday people. 🇲🇾 面包肉丸🍞🍝 Tomato Meatball Pasta Meatball 300g minced pork (>30% fat ratio) 1slice of Gardenia Bread (wheat or white) 2 cloves minced garlic 1tsp dried oregano 1tsp dried thyme 1/2tsp chilli flakes 3tbsp grated Parmesan ~ chopped Italian parsley ~salt & pepper 1. Soak one slice of bread in water. Half a cup of water will do. Once bread absorbs all liquid, lightly squeeze the bread and remove excess water. 2. Mix all ingredients together. Mix until even. Form equal balls depending on your preference. 3. Sear meatballs until lightly golden. Set aside while we start with the tomato sauce Tomato sauce 300g cherry tomato 2 cloves garlic 2-3 parsley stems 1 tbsp tomato paste 3-5tbsp of extra virgin olive oil (EVOO) ~ salt & pepper 1 cup of water 1. This might be the easiest tomato sauce recipe (barring ready to eat tomato sauce 🙂) 2. Mix all ingredients in a cold pot. 3. Put the pot on medium heat and let it cook under tomato starts to breakdown. 4. Once tomatoes are soft, add 1 cup of water and let it continue to simmer for another 10mins. 5. Your tomato sauce is ready! Tomato meatball 1. Place the seared meatball into the tomato sauce and continue to cook on low heat. Simmer for another 5-10mins. 2. You will realize the sauce will start to thicken (as per the video) which is a good sign. Assemble 1. On a pan with medium heat, add 2-3 ladle of tomato sauce. Add pasta and toss until combine 2. If the sauce is too thick, add a little pasta water. 3. Plate the pasta, garnish with grated Parmesan, chopped parsley and drizzle of olive oil. 4. Enjoy! 🍝👍🏻

🥔老婆爱土豆🥔🇲🇾 POTATO ROSTI | We call it Hashbrown 250g grated potato / about 3 potatoes (I just used plain China potato from Jaya Grocer) 10g of melted butter 5g corn starch (optional, refer to instruction below) ~Parmesan Cheese ~ Salt & Pepper ~ small knobs of butter 1. Grate peeled potato with a box grater. 2. Rinse the grated potato once to remove excess starch. 3. Pre cook the grated potato by soaking in hot water for 5mins (you can choose to blanch in hot water too, however ensure to not over cook it as it will turn mushy). 4. Squeeze the potato dry with a kitchen towel 5. Season the precook grated potato with Parmesan cheese, melted butter, salt and pepper. Optionally, you can add 5g of corn starch in the mixture to keep the potato together (we prefer the texture without). 6. Pan fry the potato with medium high with a 5inch pan.. or just get the smallest pan possible at home. Big pan = thinner ; Small Pan = thicker. 7. When the edges starts to crisp, put a few knobs of butter on the side of the pan to give a better flavour and colour. 8. About 5mins in, flip the potato with a plate (refer to video of how I did it), and continue to fry the other side until golden brown. 9. Ready to serve it up to your wife that is obsessed with potatoes. 🥔🥔🥔🥔🥔🥔🥔

🇲🇾 SMOKED CHICKEN 🐔熏鸡🐓 Recipe inspired by.. @mayho10 ‘s 大厨爸爸🤓👍🏻 2 chicken leg (if you opt for whole chicken, just 3x the following recipe) 1 knob of grated garlic 1 knob of grated ginger 1 tbsp of ShaoXing wine 1tsp salt 1 tsp pepper ~50g of chopped leeks (bottom half of the leek) Mix above ingredients and marinate for 30mins. On a plate, sprinkle the chopped leeks evenly, then lay the chicken leg over, skin side up. Steam the chicken on high heat for around 12mins. When cooked, remove from steamer and set chicken leg aside to cool slightly. Reserve the cooking liquid from the chicken to use as sauce later. Smoking the chicken 1tsp dark tea leaf (in my case I’m using pu er tea) 1tsp of salt 1tsp of sugar Rinse the tea leaf under running water for ~30secs to rehydrate it. To create a smoking set up, use an aluminium foil and fold a shallow box. Put in tea leave, salt and sugar and mix evenly. With a wok, place the foil packet at the bottom of the wok before adding the rack and the chicken. Time to smoke. Cover the wok with a lid, and turn on mid-high heat. You will realize the sugar and salt in the packet will start to melt and caramelise with the tea leaves, creating this smoky environment for the chicken. Smoke until the chicken is golden brown. This will usually take about 5-10mins of smoking time only. Chop your chicken to your desired portion (or don’t chop it at all haha), serve it up with the reserved cooking liquid from the chicken. Garnish with coriander and a half of a calamansi (optional). Now you can say happy CNY. 👍🏻🧧🐓
