What’s the story behind our bagels?
Jyan’s spent years refining the process down to this method. “We ferment the dough for 16 hours - long and slow - to build flavor and character. They’re made with levain, barley malt, and our fresh Yecora Rojo wheat flour. Each bagel gets boiled in barley malt water, seeded by hand, then baked in a super hot oven with a blast of steam.“
