All I can say is wow the Valley finally got a real Ramen spot if you haven’t been to @bincho_ramen you are blowing it. Hands down the best Ramen I think I’ve ever had. That’s a pretty big statement.
Mango Halibut Ceviche with Serranos
Ingredients: • 1 lb halibut, cut into small cubes • 1 cup fresh lime juice (about 8-10 limes) • 1 ripe mango, peeled, pitted, and diced • 1/2 red onion, finely chopped • 1-2 Serrano peppers, finely chopped (adjust to taste) • 1/2 cup fresh cilantro, chopped • 1 medium tomato, diced • 1 avocado, diced . 1 cucumber. . 1 Serrano. • Salt and pepper to taste • Tortilla chips or tostadas for serving
Instructions: 1. Marinate the Halibut: • Place the halibut cubes in a large glass or ceramic bowl. • Pour the lime juice over the halibut, making sure all pieces are covered. • Cover the bowl with plastic wrap and refrigerate for about 30-45 minutes, or until the fish turns opaque and is “cooked” by the lime juice. 2. Prepare the Vegetables and Mango: • While the halibut is marinating, prepare the mango, red onion, Serrano peppers, cilantro, tomato, and avocado. • Combine the mango, red onion, Serrano peppers, cilantro, and tomato in a large bowl. Mix well. 3. Combine and Season: • Once the halibut is ready, drain off the excess lime juice, leaving just a little bit to keep the ceviche moist. • Add the halibut to the mango and vegetable mixture. • Gently fold in the diced avocado. • Season with salt and pepper to taste. 4. Serve: • Serve immediately with tortilla chips or on tostadas. • Garnish with additional cilantro and lime wedges if desired.
